Mula noong kaunaunahang alak na ginawa namin sa Orchard hanggang ngayon sa aming Haven nanatiling organiko at natural ang aming mga Fruit Wines. At dahil gawa sa katas ng natural na mga prutas malalasap ang lasa at linamnam ng prutas na pangunahing sangkap ng aming mga alak. Halina't tikman ang mga eto sa aming Bahay-Alak . Bukas po kami mula 9 a.m. hanggang 6 p.m. Lunes hanggang Sabado sa Doña EmZ Haven dito sa bayan ng Bani, sa tahanan ng pinakamatatamis na Pakwan.

Bold, young, very promising.... taste test after 1st racking

"racking" ang tawag sa paraan na kung saan isinasalin sa panibagong fermentation vessel ang inaalak upang maihiwalay at maiwan na sa bandang ilalim ng lalagyan ang mga sediments o ribaba . Eto ang natural na paraan upang luminaw ( fining) ang inaalak na hindi na kinakailangang gumamit ng anumang gamot, elemento o kemical upang luminaw at kuminang ang alak. Kadalasan etong inuulit tuwing ikatlong buwan, hanggang sa ika-siyan na buwan na kung saan malinaw na ang alak at maaari nang hanguin at isalin sa bote. Masarap na etong inumin at maaari ding "pagmature-rin" pa eto kung ninanais na mas luminaw pang lalo at magiging mas suwabe pa ang lasa.

Kaya .... sa aming batang alak ng Kasuy.... kitakits ulit tayo pagkatapos ng tatlong buwan.

Ever wonder why there are too many glasses here????

Let us share a bottle of wine but sharing a glass is not recommended. And this is not being maarte.

It had been proven time and again that certain diseases can ne transmitted though body fluids , particularly , saliva. Thus, if we share the same glass for a drink of wine , we are also sharing our saliva with each other , and might unknowingly be sharing germs and/viruses that can survive for as long as seven days outside the body and still capable of infecting others.

It's the 1st of April but this is no April Fools' Day but a day full of blessings to thank the Lord. Bani is Haven's place, and it was officially announced today, April 1, 2020 that Bani is still a COVID-19 free municipality.

Another blessing for the Haven... our macopa fruits for our Macopa / Rose Apple wine , are starting to ripen.

And another ... THE Bugnay ,that started the Haven's momentum is now in bloom which as I remember from the handed-down lessons from our ancestors that the bugnay in bloom is an indication that the rains will come early.

Reflecting on this, Nature have always been taking care of us in its most special way, like, this is the dry season with temperature reaching up to 35 degrees then Mother Nature makes a grand and graceful announcement soothing us that the rain will soon come and the dry spell will end.

It was in August 2016 when the Bugnay (Bignay/ Queensland Berries ) fruits were ripe and started falling down on the ground, came the realization that the fruits of the tree lovingly planted and nurtured by Apo Poloy were all going to waste. That was then the time when we requested for a recipe from the Mun. Agriculture Office of LGU-Bani for Bugnay Wine. August 18, 2016 , the fruits were picked , washed, mashed and blended for our first ever Bugnay Wine. Most priced, oldest wine in our collection which was bottled in December 2016 after its second racking.

Sa paggawa ng alak kailangan lahat ng paligid at mga kagamitan sanitized dahil kung makukontamina ang aalakin, tutubuan eto ng wild bacteria at idadamay na sisirain ang buong batch na naexpose dito..... ngayon sa kasalukuyan Enhanced Community Quarantine, ganoon din ang prinsipyo , isanitize natin ang paligid, na magkulong tayo sa mga bahay natin upang hindi tayo maexpose sa corona virus , at hindi mahawaan / makontamina ang buong kumudidad na kinabibilangan natin.
