The swirling of the wine glass activates esters and aromatizes them, which allows you to smell more of the wine, and thus enjoy it more! Also it allows the wine to breathe.
Oxygen is allowed to attach itself to the compounds that make up tannins, and rounds them out, giving them a softer nature.
Always remember that swirling the wine in the glass, enables some evaporation to take place and the more volatile compounds to dissipate!
There are several techniques for swirling wine. Some people leave the bottom of the wine glass firmly planted on the table and just make a few circles with the base.
Others like to pick the wine glass up and slightly flick their wrist, thereby making little circles in the air.
Others like to be extremely show with their swirling, making grandiose motions like they’re getting ready to lasso a steer.

Two-star chef François Geurds will combine dishes with six special wines from the Peter Sisseck collection, also known as The Godfather of the red wine. Sisseck has been a connoisseur in the field of red wines for years and his own Grand Cru wines from Ribera del Duero are very popular and rare.
