The Solar from , this wine got lots of flavour, with soft as its main word. Gewurzt sweetness but with fresh soft fruit and light spices like cloves, white pepper, nutmeg. Beautiful floral in the nose. It all coats your mouth with a bit of dryness from orange peel and a touch of sourness.
The more you drink, the more different flavours you find. It is delicious.
Age of vines: 30 years, Hand-picked - maceration for 10 days - kept for 9 months in demi-muid. (600l oak barrels)
The Auxerrois from , has really light flavours of cooked apple. It has nice soft warm spices. A perfect balance between accidity and soft fruit with a hint of anice and touch of Calvados
This wine has a very long relaxed and mellow finish.
One half will be macerated for 5 days with the skins, the other half is direct pressed. After that it goes in one of the small stainless steel tanks for 1 year.
