BBIRBICIÙ was born in Pantelleria in 2020, when the destinies of three boys intersected in a virtuous and counter-current project. Davide, Agostino e Alessandro committed to living on an island far from everything and produce wines completely natural, with very ancient methods.
Pantelleria, with its lunar landscapes, centenary vineyards and extreme soils, its a very interesting terroir, an Italian island that is situated just outside the Libyan cost! In this special place, you can also grow very special grapes: a volcanic land with a hostile and impervious appearance but in reality, generous and rich due to the precious remains of millennia of eruptions.
Biggest peculiarity of these vineyards is how the vines are grown, untrained, in the form of Pantelleria saplings, albarello Pantesco, cultivated in basins about 20 cm deep, useful for accumulating rainwater and protecting the bunches from the wind.
Bbirbiciú vineyards are located in three different areas of the island, Bukkuram, Ghirlanda and Sataria, each with its own characteristics regarding exposure and terrain.
In the spirit of maintaining the traditions of their ancestors, the guys decided to go back to the ancient use of amphorae to make and ripen the wines.
Vinification in amphorae involves destemming the grapes and maceration on the skins. All the wines are obtained through spontaneous fermentation with native yeasts, without the addition of sulfur dioxide in any phase of vinification and without any synthetic product.
And the refinement of the wine also takes place in amphorae, for about four months, with the presence of the skins, and then for another 2-3 months in the bottle before being put on the market.
