Domaine Roc de l’Abbaye is located in Saint-Satur, a village in the heart of Sancerre with winegrowing origins dating back to the 11th century.

The domaine has been helmed by the Mollet family for generations. Winemaker Florian Mollet has been managing it since 2000, building a modern cellar and expanding the family estate to 42 acres. Each parcel is vinified separately in small stainless steel tanks to maintain site specificity. The domaine holds 12 parcels total in Sancerre, with 24 acres of Sauvignon Blanc and nearly 4 acres of Pinot Noir. Their parcels in Pouilly-Fumé are made up of nearly 15 acres of Sauvignon Blanc. The estate’s farming practices, which have earned two certifications, focus on preserving the ecosystem, delivering quality and maintaining local heritage. The wines are fresh, textured and refined, with a distinct minerality that is indicative of the soil.

𝐁𝐀𝐈𝐉𝐈𝐔 is not just a drink, it is a category of drinks. Baijiu can be categorized into 13 varieties according to factors such as production, distillation, smell, and fermentation. However, there are 4 main styles of Baijiu, also known as the basic Baijiu aromas:

𝐋𝐈𝐆𝐇𝐓-𝐀𝐑𝐎𝐌𝐀 𝐁𝐀𝐈𝐉𝐈𝐔 - The pride of Northern China, light-aroma baijiu brings the heat to a frigid region. Traditionally fermented in stone jars, it can also be distilled in pits. It has short production cycles and low overhead, making it cheap and easy to produce. Moreover, its deadly strong, often bottled at 60% ABV or higher.

𝐑𝐈𝐂𝐄 𝐀𝐑𝐎𝐌𝐀 𝐁𝐀𝐈𝐉𝐈𝐔 - Mellow and approachable Rice Aroma Baijiu is the lightest form of baijiu. As a result, Rice Aroma baijiu is often compared to Chinese wine and the Japanese spirit Saké. In fact, a Rice Aroma baijiu may be classed as a huangjiu as opposed to baijiu. This will depend on the shade of the finished spirit

𝐒𝐀𝐔𝐂𝐄 𝐀𝐑𝐎𝐌𝐀 𝐁𝐀𝐈𝐉𝐈𝐔 - Popular with Chinas movers and shakers, it is almost synonymous with its hometown Maotai, in southwest Chinas Guizhou Province. It is distilled from sorghum fermented repeatedly in stone brick pits. As a style it is known for an intricate production process and a rich umami avor. It is as challenging and rewarding a category as any of them.

𝐒𝐓𝐑𝐎𝐍𝐆 𝐀𝐑𝐎𝐌𝐀 𝐁𝐀𝐈𝐉𝐈𝐔 - Popular throughout China, strong-aroma baijiu is most commonly associated with Sichuan Province. It is an assertive, fruity drink built to battle with the regions molten hot cuisine. And much like that cuisine, it is popular throughout the country. Strong aroma is the biggest sub-category of baijiu by market share and volume, accounting for more than two thirds of all baijiu production.

🐝Boutinot’s love affair with the Southern Rhône spans thirty years of making wine in the region. In 2010, the relationship was sealed with the purchase of a winery and vineyards above the village of Cairanne. Domaine Boutinot’s seven vineyards are planted with classic southern Rhône grape varieties – old vine Grenache Noir and Syrah, Mourvèdre and Carignan Noir – and they all sit within the Cairanne Cru boundaries, sanctioned in 2016 when Cairanne was granted its own appellation status.

As the oldest house in Champagne, Gosset take great pride in their traditional family know-how that has been preserved for over four centuries. In 1584, Pierre Gosset originally produced still red wines with grapes from his own vines and it was not until the 18th century that the wines made in Aÿ began to bubble.

Today, Gosset's wines are presented in the same antique bottle that they were originally in and they ensure to avoid malolactic fermentation so that the natural fruitiness of their wines is always maintained.
