The winery is committed to intervening as little as possible in the wine-making process. Like the vineyards, they pursue the maximum advantage of the soil and climate in the wine cellar, so that the wine can truly reflect the terroir of the location. Their job is to work with nature to achieve the highest quality wine possible. In this case, they believe, going back to basics is a step forward, including using ancient foaming techniques such as "pรฉtillant naturel", also known as PET-NAT. ๐Ÿ˜โค
