Pisco's name derives from an important colonial port named after the city of Pisco in Peru, where viticultural products were stored and transported in Piscos jars. These jars are named after the city Pisco and were traditionally made of clay or ceramic, and had a unique shape that allowed for easy transportation on mules or ships.

What sets Pisco apart from other liquors is its "Denomination of Origin" standards, which include the region of production, grape varieties used, and alcohol percentage. Rompe Mar Pisco meets these standards and is produced in the Lunahuanรก Valley, three hours away from Lima. Its Acholado blend comprises 50% Italia grapes and 50% Quebranta grapes, resulting in a completely pure and natural Pisco. Bodega Santa Maria, a small yet highly experienced distillery that has been making Pisco for three generations, is behind the skilful distillation process of Rompe Mar Pisco. As you know, piscoโ€™s unique ingredient is grapes. So, you want to make sure that you donโ€™t mess with the terroir. Here are five components that make our terroir exceptional.

1. Abundant sunshine - Our valley's bright and sunny days provide the perfect environment for our grapes to ripen and gain high sugar content, giving birth to a pisco with an expressive taste.

2. Low humidity - this prevents our grapes from being exposed to a moist environment, one that is typically conducive to the development of mushrooms. As a result, we do not need to fumigate our vineyards, meaning our product is more organic.

3. Access to some of the purest and cleanest water flowing down from the Andes Mountains. We use water from the glaciers of the Andes Mountains to water our vineyards. This water is fresh (useful for condensation during distillation) and rich in exceptional minerals.

4. The effect of the Humboldt Current - Our vineyards are located just 35 kilometres from the Pacific Ocean: the Humboldt current pushes a cooling breeze through our valley. This impacts the grapeโ€™s maturation process by slowing it down. The result? Grapes with much more intense notes.

5. An ideal altitude - Valley elevation is 600-800 m above sea level, creating a significant thermal amplitude (day-to-night temperature difference) that allows grapes to ripen slowly and evenly, resulting in more complex flavours in our pisco.

There are few places where the influence of both the ocean and the mountains are so tangible: our Lunahuanรก valley is one of them.

At Rompe Mar, we love a good cocktail story, and the tale of the Pisco Reyes is no exception. This unique cocktail was born during a trip to Machu Picchu when our founder and his Mexican friend decided to mix their favourite local drinks together.
Little did they know that their impromptu creation would go on to become a beloved cocktail in its own right. The Pisco Reyes is made with Rompe Mar pisco and Ancho Reyes, a spicy and smoky liqueur made from green chile ancho peppers. The combination of these two ingredients creates a bold and flavourful cocktail that is sure to impress even the most discerning palates.

As the sun starts shining brighter and the days get longer, we invite you to enjoy a fancy alternative to the classic Aperol Spritz, perfect for rooftop and terrace settings or any summertime celebration: The Marbella.

The Marbella is an assemblage of some really fine booze: Rompe Mar pisco, dry rosรฉ wine, green chartreuse, rose liqueur, seltzer water, and a lemon slice that echoes with our piscoยดs citric notes. The Marbellaโ€™s draws its unique flavour profile from the green chartreuse, a complex herbal liqueur made by Carthusian monks in the Chartreuse Mountains of France. For the little side story, the monks have been making the liqueur uninterruptedly since 1737 by religiously (pun intended) following an old recipe contained in a manuscript given to them by Franรงois Annibal dโ€™Estrรฉes in 1605. The chartreuse thus infuses the Marbella with not only its rich herbal notes but also a great deal of history.

It is that time of year again - the harvest season for the grapes that make our beloved Rompe Mar Pisco has officially begun. ๐Ÿ‡๐Ÿท

At Rompe Mar, we take great care in cultivating and monitoring our grapevines until they reach their peak ripeness for harvesting. This process includes planting and developing the vines in well-suited, fertile soils, with at least three to four years of growth before the first harvest can begin. ๐ŸŒฑ

During the harvest season, which typically takes place from late February through March, our expert team hand-picks each grape bunch, ensuring that only the highest quality grapes are used in the production of our pisco. The grapes will then be immediately transported to our distillery, where they will be gently crushed and separated from the grape marks before undergoing a short (10h) maceration followed by a 10-12 day fermentation phase. Finally, the must obtained after fermentation will be distilled, a process that will give birth to our signature pisco, a blend (or โ€œacholadoโ€) of Quebranta and Italia varieties. ๐Ÿ‘ฉโ€๐ŸŒพ๐Ÿ‘ฉโ€๐ŸŒพ
