蒸留技師が個性とクリエイティビティを発揮して作られるシリーズ、ディスティラーズドリームズ “Distillers Dreams” の第二弾。
その名も『To bean, or not to bean』。
監修した遠藤光祐 蒸留技師 に今回の”DD”について聞きました。
プロフィール:遠藤光祐
横浜出身、東京農業大学応用生物科学部醸造科学科卒。
大学では微生物学、バイオテクノロジーをベースに各酒類や発酵食品について学んだ。大学時代に鹿児島の焼酎蔵でのインターン経験あり。
京都蒸溜所での蒸留歴は約3年。
Q:今回のテーマは?一番難しかったところは?
今回のテーマは「コーヒーの生豆」のジンです。
一番難しかったのはどういった品種の豆を使うか、どういった豆の精製方法(プロセス)がジンにあっているかを吟味するところでした。「コーヒー生豆のジン」というコンセプトをうまく表現するため、ブレンディングトライアルは20サンプル以上行い、豆の蒸留についても最終的なメソッドにたどり着くまで10数回のトライアルを行いました。
Q:オススメの飲み方は?
ジントニックやネグローニにするとコーヒーのカカオ感や生豆の酸味が活きますし。副原料としてオレンジピールを使用しているためキュラソーとも相性が良いです。淹れたコーヒーやコーヒーリキュールを使ったカクテルとは違う、全く新しいアプローチのコーヒーカクテルをお楽しみください。
お湯割りを試してみてください。不思議な感覚を楽しめるはずです。
Q:今後の”ドリーム"を教えてください。
日本でもっとジンがポピュラーになることです。

Profile: Kosuke Endoh
Born in Yokohama. Studied Fermentation Science at Tokyo University of Agriculture.
At the university, he learned about alcoholic beverages and fermented food based on microbiology and biotechnology. He did an internship at a shochu distillery in
Kagoshima and has distilled at The Kyoto Distillery for almost three years.
Q: Whatʼs the theme of the DD? What was the most difficult thing?
The theme is green coffee beansʼ gin.
The most difficult thing was to pick which variety and which process of beans are good when it comes to making it gin. I did more than 10 distillation trials to find the best method of distilling beans, and 20+ blending trials to express the concept of “green coffee beansʼ gin”
Q: What would be the best way to enjoy the gin?
You can enjoy the cacao-like aroma and sourness from the green beans in a G&T or
Negroni. It goes well with Curaçao since orange peel is also used as a sub-ingredient.
This is a new approach to coffee cocktails that is different from those with espresso, brewed coffee or coffee liqueur.
Itʼs interesting when you make oyuwari (with warm water).
You can experience something magical.

My dream is to make gin more popular in Japan.

季の美ハウスでは会員制オンラインショップに先行して、200mlボトルの新たなシリーズ「ディスティラーズドリームズ」の第二弾 「To bean, or not to bean」を店頭にて販売開始しております。
の蒸留技師・遠藤光祐による今回の作品は「コーヒーの生豆」のジン。生豆そのものの香りを嗅いだ時のニュアンスをそのまま1本のジンとして表現。パカマラ種のハニープロセスを使用し、その独特なフレッシュなフルーツのような熟成感や酸味感、カカオニブのような甘くほろ苦い香り、苔や森林のような香りを再現した商品となります。ハニープロセスにより生まれる独特な果実感や酸味を表現するためにネーブルオレンジと赤紫蘇を使用。また、ボディ感をもたせて、カクテルにしたときに活きるように軽くローストした同じ豆も使用しています。

The new 200ml-bottle series of our distillers’ bespoken gin, Distillers’ Dreams #2, “To bean, or not to bean”, was unveiled at House of KI NO BI prior to our membership-only web shop!
This artisanal product created by Kosuke Endoh is a gin that expresses the unique nuances of the green coffee beans. The gin is reinterpretation and reconstruction of honey-processed Pacamara beans, and its distinctive ripeness and sourness like fresh fruit, a bitter-sweetness like cacao nibs and an aroma reminiscent of moss or a forest.
He used navel orange and red shiso to express the unique sweetness and passionfruit-esque sourness derived from the honey process, and lightly-roasted beans are also used in order to contribute to a full-bodied mouthfeel and to shine in a cocktail.

季の美ハウス内”ジンパレス”では19世期末のイギリスアンティーク家具と季節のウェルカムカクテルがお客様をお迎え致します。
9月のカクテルは焼き栗を使用したシロップにレモン果汁を加え、シェイク。ソーダを加えることで清涼感と後味に伸びる焼き栗の風味をお楽しみいただけます。
ベースとなるのは5周年限定製品の「季の美 GO」。
付け合わせも秋の味覚。
信濃産リンゴをバーナーで砂糖と共に炙りリンゴそのものの食感を残したまま外のカラメルがカリッとりんご飴の様などこか懐かしい風味をお楽しみいただけます。
【Introduction of our Welcome Cocktail for September】
At Gin Palace in the House of KI NO BI, we will host our guests with antique décor and a welcome cocktail.
For September, we use roasted chestnut syrup combined with lemon juice to balance up and give a good shake. Then, top with soda to give a refreshing feel and chestnut’s long lasting aftertaste to it.
Base spirit is our 5th anniversary product “KI NO BI GO”.
The garnish is also seasonal.
A piece of candied apple produced in Shinano (Nagano pref.). It’s quick burner baked to keep the nice texture of apple and crunchy caramel outside.

The Gion Matsuri is one of the most famous and largest annual festivals in Kyoto. You can enjoy traditional rituals and events throughout the month of July.

We had the House of KI NO BI 2nd year anniversary event this Wednesday with guest bartender Kenji Tsubokura from Bar Rocking chair. We are very grateful to be able to celebrate our anniversary with you at the House.

京都蒸溜所による初のブランドハウス「季の美House」は、蒸溜所VRツアー、「季の美」のつくりが学べるセミナー、ジンの歴史、店舗限定のグッズ販売など「季の美」の世界観が体験できる空間です。店舗となる町家は元々木材商の歴史ある建築物で、土壁や梁、石畳をできるだけ温存し、当時の雰囲気を極力残した風情ある佇まいです。

The House of KI NO BI offers a blending room, seminars for gin enthusiasts and a shop with exclusive items to showcase the distillery's brand philosophy and identity as a pioneer of Japanese gin. The House of KI NO BI is located within a renovated traditional ‘machiya’ townhouse, which was built as a timber mill and preserves the original interiors including earthen walls, beams and roof tiles to keep the ambience of a traditional ‘machiya’.
