COTE-ROTIE CHATEAU D'AMPIUS
The essence of the appellation smokes out from the glass, offering hints of cracked pepper, bacon, clove and leather. It's reasonably full-bodied for Côte Rôtie, with feral, smoked-meat flavors, ample spice and plenty of the concentrated plummy fruit. Tannins are silky, making this approachable now, but likely capable of aging well for at least 10–15 years.

There is evidence that people in ancient Egypt were sometimes compensated with beer for their labor. The Smithsonian Institution reports that employees who constructed the pyramids were paid approximately four to five liters of liquid per day.

Because beer isn't exactly an efficient way to do business, you might be asking why people would pay for anything with it. However, in more ancient times, beer was more malty and had a lower alcohol by volume (ABV). It was also seen to be something that could substitute for a meal. Therefore, by paying workers in beer rather than cash, you insured that they would be able to remain on the clock without needing to take breaks to return home and eat. Additionally, they would most likely be a little tipsy, which would likely result in less complaining about the incredibly hard working circumstances.

Cognac drinkers believe that the darker a cognac is, the longer it has aged in the barrel, making it better and more valuable. The barrels' contents are colored by the wood's tannins during natural aging.

Limousin or Tronçais oak casks age cognac. The Limousin woodlands northeast of Angouleme provide a wide-grained oak, while the Burgundy region produces a closer-grained oak. Clearly, wider grain oak permits the spirit to pe*****te the wood faster, accelerating maturity. This makes Limousin oak the most popular.

Oak barrels are roasted to eliminate tannins before use. Light to heavy toasting is possible. The darker a barrel is toasted, the bitterer the cognac, which might take years to fade. After distillation, most cognacs are moved to ancient barrels to color more slowly. Since smaller barrels have more surface area, cognac color is also affected by barrel size.

"La Rochelle is unusual in Cognac history because Arab distillation technology met local wine (The wine of Aunis). Dutch salt merchants liked La Rochelle's deep, well-protected harbor. ""Dutch burnt wine"" became ""British brandy"" in the 18th century and ""French Cognac"" in the 19th century due to these reasons.

In the second half of the 16th century, Dutch salt merchant Bonaventure Godet settled in La Rochelle and began trading ""Dutch burnt wine,"" which would become so popular.
