काल बायकोने ठाण्याहून खरवस मागवला होता... रात्री टी.वी . पहाता पहाता तो आम्ही चापला.

"कसा मस्त आहे की नाही ?"

हो ....छान आहे.दुधात जिलेटिन घालून केलेला "चिक" व त्यापासून बनवलेला खरवस मी पहिल्या चमच्यात ओळ्खला होता . पण बायको समोर हो ....छान आहे असे म्हणावे लागले.

आमच्या गोठ्यात ( एके काळी ) वर्षाला ४ /५ म्हशी वीत असत. आणि मग खरवस , नासकोणी , खरवसाची बर्फी असे विविध प्रकार आई / आजी करत असत.

हे खरवस बनवणारे रोज २०० /२५०किलो खरवस बनवतात. तो दादर पर्यन्त अनेक "हाटेलात" पुरवतात.

आता विचार करा , २०० कि. खरवस बनवायला किमान १०० कि. चीक हवा ,त्यासाठी कमीत कमी ५० म्हशी व्यायला पाहिजेत, त्यासाठी किमान ५००० म्हशी गोठ्यात हव्या. असे अनेक खरवस वाले मुंबापुरीत आहेत. मला तरी हे केवळ अशक्य वाट्ते.....एवढ्या म्हशी बाळगण्या परीस तो गोठ्याची जागा विकून बक्कळ पैसा कमवेल.

थोडा विचार +विचारपुस करता " जिलेटिन " + दुध = खरवस हा फॉर्मुला समजला.

बाटली बंद " लोणची " आणि त्यावर तरंगणारे तेल पाहून मला असाच संशय आला. गोडेतेलाची किंमत , लोणच्यामधील तेलाचे प्रमाण व लोणच्याची किंमत ह्याचा मेळ लागेना......

दोन चार ठिकाणी चाचपणी केली . मग उलगडा झाला. " लोणच्या मध्ये वापरले जाणारे तेल गोडेतेल ( शेंगदाणा) नसून सरकीचे (कापुस बी )आसते.

बाजारात लस्सी प्यायची म्हट्ले की मला आठवण होते "सायट्रिक acid " ची . ब्लोटिंग पेपर + सायट्रिक acid= फक्कड लस्सी.

हेच सायट्रिक आसिड दूधाच्या भुकटी बरोबर आले की "छास " तय्यार. ताक प्यायल्यावर जिभेवर कडवट आंबट चव राहिली कि ओळखा ही सायट्रिक आसिड ची कमाल.

हे सायट्रिक आसिड / चुन्या बरोबर " पाणी-पुरी " मध्ये सापड्ते. चुना मिर्ची म्हणून न सायट्रिक आसिड चिंच म्हणून आपण पितो .....भैय्याजी थोडा पानी और.....कारण ही दोनिही रसायने मिर्ची व चिंचे पेक्षा खूप स्वस्त आहेत.

ऊसाचा रस ऊन्हाळ्यात चांगला . पण काही "कलाकार" ह्यामध्ये "सॅकरिन " वापरतात्..... थोड्या रसात भरपूर पाणी +सॅकरिन = भरपूर रस व भरपूर नफा.पण ह्याचा वापर एवढा सर्रास नाही.

टोमॅटो सॉस केवळ "भोपळ्या पासून " बनवतात म्हणुनच हॉटेलातून बाटल्या भर्भरून ठेवलेला असतो व परवडतो .

नेस्ले / एच्.एल्.एल. इ. कंपन्या टोमॅटो सॉस टोमॅटोपासून बनवत असतील ही...

ही थोडी झलक.

शरीरास विशेष हानी कारक भेसळी विषयी परत केंव्हा तरी .

तो पर्यन्त " वडापावाच्या" लसूण चट्णीत " नारळ /खोबरे / शेंगदाणा व समप्रमाणात लाकडाचा भुसा / बारीक केलेला पुठ्ठा नाही ना ? एवढी खात्री करा झाले.

Today’s post is about GMO.
Why is there such a hue and cry over GM mustard? What is GMO?
GMO means Genetically Modified Organisms. They are genetically engineered (GE) plants, whose DNA has been altered in ways that cannot occur in nature or in traditional crossbreeding, most commonly in order to be resistant to pesticides or produce an insecticide. So, what is so bad about it, that Swadeshi Jagran Manch and Sarson Satyagraha are resisting its approval?
Let’s consider a few things about GMO:-
• Crops were genetically engineered to be resistant to the herbicide Roundup and to produce its own insecticide, Bt Toxin.
• However, use of toxic herbicide like Roundup has increased 26% since GMO crops were introduced.
• GMO means MORE herbicide not LESS
• Herbicides like Roundup increase the risk of cancer; they cause developmental delays, behavioural disorders, autism, immune system harm, and motor dysfunction in infants.
• GMOs have given birth to ‘super weeds and super bugs’ which can only be controlled with highly toxic poisons like 2,4-Dichlorophenoxyacetic acid (a major ingredient in Agent Orange, a herbicide and defoliant chemical used by U.S military in Vietnam)

After knowing all this, do we still want GM mustard, GM tomato, GM brinjal, or GM any crop at all?

Hello friends, a few more facts about processed foods that will urge you to go fresh, green and natural.

What is ‘Nature Identical Flavouring’ Anyway?

If you are like me, you avoid processed foods as much as possible with perhaps a few exceptions. In my case that may be tinned tomatoes or tuna. Foods that are pickled like capers or…well, pickles, are something else you may find in my refrigerator. These are traditional foods with one or few ingredients preserved with either an acidic medium, salt or oil so the ingredients list is often one plus the preserving media.
However, increasingly seemingly simple foods like supermarket ‘flavoured’ teas or even apple juice have either ‘flavouring’ or ‘nature identical flavouring’ added. Strange, isn’t it? Why would apple juice or orange juice or that new tea with ‘Natural’ in large letters on the box need ‘flavouring’?
‘Nature Identical Flavouring’ or aroma is…not natural. It is laboratory produced.
To create new flavour additives, chemists sometimes use fungal and tissue cultures—both of which can produce flavourings classified as “natural”.
Step back a moment and understand that all foods have natural chemicals in a synergistic balance that gives flavour and aroma to the product. Laboratories can and have isolated the precise flavour and aroma components for the food industry – in fact, there are over 2,000 approved flavourings. Why?, because processed food loses its flavour quickly if not immediately. Then there is the transport and storage problem that may also adversely affect foods.
There was a time when labels had to show what was natural, artificial or as in more recent years, ‘nature identical’ label. However, this is no longer the case for most of those 2,000 lab produced flavours and aromas thanks to government deregulation.
The flavour of the produce we consume is highly variable, depending on the harvest, time of harvest and transport. Too much rain, for example will result in a less than optimal watery tasting orange – yet the orange juice of any particular brand will be consistent. Lab produced ‘nature identical flavouring’ pack solves this problem and also that of flavour consistency. Good news for the mega-food industry. They can sell consumers substandard product that has been boosted with artificial flavour. Read about the orange juice fraud in the reference section below.
It may be true – if one listens to the scientists – that there is no chemical difference between natural orange flavouring components and that of the lab produced. However, this is not the entire problem, the problem is the concentrated doses, not otherwise found in nature. Scientists may make no differentiation between lab produced and truly natural – but the body does.
A family whose meals consist mostly of highly processed convenience foods is consuming large amounts of chemicals along with their foods which in the short and long term will affect the health. Most vulnerable are young children, whose little bodies are still developing.
Flavour engineers get consumers addicted and most food manufactures would rather not have it known that their processed foods are flavoured with a concoction of chemicals.
The problem is the long term, accumulative effect on the body that may produce vague symptoms difficult to identify as to the cause. A short list of known symptoms is:
 skin rashes (eczema, hives, itchy skin)
 asthma or worsen existing asthma of any kind
 headaches, migraines
 joint pains
 susceptibility to frequent colds
 lack of concentration
 irritability
 anxiety
 restlessness
 lethargy
 aggressiveness, overreactions to normal situations
Add to these lab produced flavours and aromas the flavour enhancers (MSG etc) chemical colourings and preservatives, soya and unknown fillers, less than optimal vitamin content due to the mass production processing and it is no wonder that society is faced with far more health problems than just a few generations ago.
Isn’t it better to eat simpler and ditch the chemical concoctions passed off as ‘food’? Reintroduce oneself and family to real food? Start with one or two products at a time. Ditch the flavoured yogurt with the syrupy ‘fruit’ and add chopped fruit instead. Cook homemade meals such as stews and soups in larger quantities and freeze them in portions to save time.
Your health starts with how you fuel your body. If not for your sake, think of those young, vulnerable and still developing bodies of your children.

There are three things in the world we work for, strive for, live for!, and those are Roti, Kapda aur Makaan!. Roti or Food being the most important. We spend all our lives to fulfil this necessity. We strive for good, healthy food for us, and our loved ones. Unfortunately, today anywhere you turn, you see adulterated food. There are harmful, poisonous chemicals in fruits, vegetables, pulses, milk, oil, meat, and water.
The whole picture is extremely scary.
I know, we all are habituated to running to the corner shop to buy vegetables and groceries, or buying fruits when we see them at the corner shop, or on the road. However, we seriously need to change this habit. We need to be aware of what we put in our stomach, as almost all the fruits and vegetables you see in the market are sprayed or injected with carcinogenic ripening agents, fertilizers and pesticides. The worst part is, these chemicals don’t affect you immediately, they are really slow killers, and that is why small kids and babies are the most affected. These chemicals not only cause cancer, but also affect our eye sight, memory, skin, hair, digestion, and weight.
Considering all the above I decided to use my farmer family background and my husband’s agri consultancy knowledge to start a home delivery service of naturally ripened, residue free, organic vegetables, fruits and groceries. We have a team of farmers who practise zero budget farming. Ripening agents used on mangoes

Calcium carbide (CaC2), which is most commonly used for artificially ripening mangoes, contains arsenic and phosphorus, both of which can prove fatal for human beings. It is a known carcinogen, which means it has the ability to change healthy human cells into cancerous cells. It causes skin allergies and rashes and can lead to skin cancer.
Though this chemical is banned in India, it is freely used across the country to ripen fruits such as mangoes and bananas.
One of the main reasons to use these chemicals is to cut short the ripening time of the fruits, so that they can be brought earlier into the market and fetch a good premium.
Since it is difficult to know the difference between artificially ripened and naturally ripened fruits, it is best to buy from a known reliable vendor selling naturally ripened, residue free fruits.
