Introducing the September Ginbox... 🥃 Over the last 10 years Japanese whiskey has surged in popularity and now distillers are turning their attentions to gin, in order to create premium Japanese spirits for a wider audience, and it is working!

Mankai is the latest Japanese Gin we have imported exclusively for you this month!

It is distilled at the Akita Distillery, in the Akita province of Japan on the island of Honshu. The Akita province is located on the coast of Japan and it extends east to the Ou Mountains, the longest mountain range in Japan.

Mankai means ‘Full Bloom’. A poetic and iconic moment across all of Japan, when the trees and flowers blossom and the whole of Japan becomes transformed. This is a gin to celebrate Autumn.

We’ve included some Japanese snacks that you might try if you were enjoying a Mankai gin in a local hostelry on Honshu island, but it must be said, unfortunately we did not get the do the research ourselves on this!

We promised some exciting gins from around the world and this month we are exceptionally excited to bring you an Australian gin, all the way from Manly Beach in Sydney 🇦🇺 Imported exclusively by WineOnline.ie for TheGinBox.ie Subscribers!

May has arrived and so has this months GinBox 📦️
Pinnacle Burren Gin Cathleen Connole opened a fine food and wine shop on Corkscrew Hill, just outside the town of Ballyvaughan in Co Clare in 1999. She grows a lot of the foods she sells herself.

Her son John came into the business with her and he originally developed a gin for the family to sell called Connotions. It was a real citrus based gin he says, but it lacked the real provenance and local botanicals that his customers asked for time and time again. He set about creating the first gin from Co Clare and the idea for Pinnacle Burren Gin was born. ‘My customers kept asking me for a Burren Gin and there was none available, so I decided to change that, using as much of the village of Ballyvaughan as I could in the process’

Firstly, Pinnacle is a well in the village of Ballyvaughan. John spent the first six months of lockdown collecting botanicals from in and around the seaside town and creating different recipes to see what flavours would work best.

Cathleen grows beetroot on the family farm, and she wanted us to bring you some of her own Beetroot chutney too. We decided to pair it with a cheeseboard this month, so we set about tasting cheeses that would match – a tough job, but someone’s gotta do it! Knockanore smoked cheddar cheese is Irish, and while not from the Burren, it is a great match here. It is made by Eamon And Patricia Lonergan in Co Waterford. It is creamy and rich, a perfect fit for beetroot chutney.

With some Sheridans crackers to complement, we’re delighted with this all Irish box this May 🇮🇪

One of our favourite things about discovering new gins is hearing the stories behind them! In 2014, the founders of Ian McCulloch and James Shelbourne met in their local pub and discussed the idea of setting up a small, local distillery. Taking their inspiration from Scottish whisky distilleries, the two friends started out with a grand vision of making a truly sustainable distillery next to a fresh water source, producing handcrafted, artisan spirits using locally sourced ingredients. First, they needed the perfect location.

Ian and James wanted somewhere filled with history, a good story and plenty of provenance. Ian happened upon Sherbourne Farm (a former cow barn and petting zoo) on the banks of the magical Silent Pool in the Surrey Hills, an area of outstanding natural beauty. Excited by the find, Ian and James contacted the landowner, The Duke of Northumberland, and got the go ahead to restore the dilapidated farm buildings into the Silent Pool Distillery.

They have been innovators of new flavours since they first started distilling and since that first distillation, they have been keen to source local botanicals, from local farmers and it has paid off. There is an ownership of the brand with the local people that has really helped Silent Pool become one of the established premium brands of gin in the UK. They won a gold medal at the Spirits Business Gin Masters 2019 and it is something they credit to their whole teams’ involvement, from production to advertising.

Aprils GinBox is looking so good 🟠 This months box features Silent Pool Citrus Gin which became the third gin in the distillery’s portfolio when it launched in 2022. We have finally managed to cut some of the red tape left over by Brexit, and have been able to bring it across from Surrey to Ireland for you!
We are delighted to include it in this month’s Gin Box. It is part of the 'Super Premium Category' of gins being made in the UK of which there are few which we have had our eye on for quite some time!
We have also included 2 x 5cl bottles of the inimitable classic Silent Pool Gin – so you can have a good proper taste of the two flagship gins from the distillery. This is made with 24 botanicals – How many can you name?!

I don't know about you but we'll be whipping up and enjoying a MIL Collins this evening 🍋 Save this recipe for later - it's super easy and ingredients you probably already have but you're bound to impress your guests!

40ml Mil Gin
20ml Honey syrup
20ml Lemon juice
FeverTree Aromatic Tonic Water

In a highball glass stir your lemon juice, gin and honey syrup. Top with Tonic Water and garnish with a slice of lemon 🍋

It's that time again ✨ We are thrilled to bring you an iconic Gin Box this month.
The is in Dublin 8 and not only is it a fully restored and renovated church/distillery but it also has a Gin School for private party hire. It has been in the making for the last ten years and finally opened its doors in 2017.

The distillery was the dream of Dublin Born and Dundalk raised, Pearse Lyons. Pearse was an agricultural scientist who in his early days, worked at the Harp Brewery, and at the Midleton distillery in Cork. In the early 1980’s he saw a gap to provide sustainable solutions using his fermentation expertise, for the agriculture industry in America. He created a company called All Tech and went on to employ over 6000 people. He always dreamed of one day coming home and building a distillery in his native Ireland.

The team at Pearse Lyons were thrilled to have the opportunity not just to have Míl Gin featured and shipped to Gin Box subscribers all over the country, but at the opportunity to welcome you to the distillery yourself. They have given us an invitation for you and one other person to do a distillery tour and tasting at a time that suits you when you are next in Dublin. We can attest that it is worth making the journey to Dublin for this tour alone!

We are delighted to include some Spritz Cans of Míl Gin in two different flavours too. These are ready to drink, so add some grapefruit to a glass of ice, and pour, for an instantly wonderful gin and tonic with no fuss whatsoever!

Homemade cocktail syrups are so easy to throw together and if you put them into nice glass bottles they make a perfect gift 💕

This Raspberry Gin syrup is so easy and keeps in the fridge for up to 3 weeks! The recipe makes 1 litre so keep some for yourself and bottle some up to give to friends ✨

Ingredients:
800g frozen raspberries
150g icing sugar
Juice 1½ lemons
500ml tonic water
10 juniper berries, lightly crushed
6-7 tbsp gin

Method:
1️⃣ Put the raspberries, icing sugar and lemon juice in a medium saucepan over a low-medium heat and cook until the raspberries have broken down and are well combined.

2️⃣ Push the raspberry mixture through a sieve into a bowl using the back of a spoon. Rinse out the pan to get rid of any remaining seeds, then pour the purée back into the pan with the tonic water and juniper berries (discard the seeds). Reduce the purée for 15-20 minutes over a medium-high heat, stirring now and then, until syrupy. Add the gin and stir to combine. Leave to cool before packaging into sterilised jars or bottles.

And this months box is fully Irish!

are based in Enniscorthy. First, they create a PNS - a Potato Neutral Spirit and then the magic happens. They add the high-level quality botanicals with strawberries being the very last botanical added at the end, so they retain their freshness 🍓

chocolate was also included in this months box and was created by sisters, Karen and Natalie Keane. For the month that’s in it, they created a ‘Totally Love Collection’. Their chocolate is some of the best in Ireland. The flavours we are including is Milk Smoky Salt and a Dark Umami seaweed, yum! Their unusual-but-delicious flavour combinations really set them apart from their competitors and we also adore their very cool packaging by illustrator Aran Quinn.

This months gin is not like anything we've featured before 💕 The main ingredient is extremely unique in the Gin World...

The Wexford based Stafford family are first and foremost potato growers, famed for the quality and consistency of their crops. 3 years ago they began to look at other ways they could use their produce and eventually settled on potato gin 🍠

Their Jackford Gin is nothing like poitín and doesn’t taste of potatoes, but it does have a very different and attractive texture and soft flavour. “We had a tasting panel of 10 people tasting away for three months, and we ended up with 11 botanicals.” These include juniper, liquorice root, angelica, black peppercorns, orris root, cassia, bitter orange, strawberry, gooseberry, rosemary and basil. The potatoes used are Roosters, hence the cockerel on the label.

Wexford is also famous for its strawberries. Thus, Jackford Strawberry Gin was born 🍓

A short hop away in Ferns, sisters, Karen and Natalie Keane are based in the Wexford countryside, where they make their own Fairtrade chocolate under their company name, Bean and Goose. For the month that’s in it, they created a ‘Totally Love Collection’ ❤️

Make your G&T feel extra ✨ fancy✨ this evening with this 5 minute Cocktail. It couldn't be easier and only uses ingredients that are sure to already be in your kitchen. Plus, every day is a celebration in our books 🍾

Method:
✨ Fill 2 large coupe glasses with ice cubes to let chill. Once the glasses are cold discard of the ice.
✨ Divide the gin and tonic water between each glass and stir to combine. Top each up with 125ml prosecco. Garnish each drink with 2 thyme sprigs and a squeeze of lime. Add a strawberry garnich if you're feeling that Valentine's Day buzz 🍓

This is a recipe you have to try before you come to the end of your January Gin. The refreshing nature of the gin stands out in this cocktail with green apple and peppermint nuances and the light acid counterpoint of passion fruit.

Ingredients:
5 cl Nordés Gin
6 leaves of peppermint
7 cl apple juice
1 cl sugar syrup
1 passion fruit

Pestle the peppermint leaves and the pulp of half a passion fruit in a highball glass. Add the rest of the ingredients, complete it with crushed ice and stir lightly with a spoon. Decorate with green apple carpaccio and passion fruit seeds.

We’re delighted to begin 2023 with a taste of Northern Spain in this month’s box 🎁
Nordés is the product of a discussion over a meal with three friends – a sommelier, a wine entrepreneur and a master distiller – who wanted to create a spirit that was true to the Galician region. Located in the northwest of Spain, they set out to capture the freshness of the Atlantic Ocean in every bottle.
Launched in 2012, the gin takes its name from the Nordés wind which meets the Galician coast, described by the brand as “the wind that brings good weather.” To create a gin of true provenance, every aspect needs to speak to the region and Nordés complete their Galician gin with striking packaging. The bottle design is inspired by traditional ceramics of Sargadelos which are also made in Galicia and are synonymous with utilising singular designs and white and blue colours. Nordés mirror this expertly to create a bottle instantly recognisable as their own.

Nordés is made from locally-grown and distilled Albariño grape spirit and it is infused with fourteen locally sourced botanicals; including hibiscus, liquorice, lemon peels, and ginger. It has received universal acclaim for its uniquely refreshing taste and fine attention to detail.
We don’t usually like to play favourites but we have to say, Nordés is definitely up there. What do you think of this months gin?

Say hello to the December Gin Box❄️☃️ Southwest Distillery is the story of one guy called Tarquin Leadbetter a classically trained chef from the Cordon Bleu in Paris. He somehow found himself sat behind a grey desk in the city of London. He quickly realised this environment was at odds to what really made him tick and he served his notice. He started to scheme. Tarquin, set his sights on establishing the first Cornish distillery for over 100 years. Armed with a 70cl copper pot still, a suitcase stuffed with botanicals weird and wonderful, and a prized surfboard, Tarquin made his return to the West Country. From this was born this months Gin - Tarquins Cornish Dry Gin. Also featuring in this months box, Lixir Tonic waters, Urney Chocolates and Lentil Chips 🍸 Definitely one to enjoy this holiday season 🎁🎉.

We're so excited about the November Gin Box featured gin 🍊 Our subscribers were among the first in the world to taste this brand new launch from The Shed Distillery, Gunpowder Orange Citrus Irish Gin. After a trip to the west coast of the US, Pat came across California Orange Citrus fruit and decided to bring it back home to put together an authentic American edition of Gunpowder Irish Gin.
We have paired this month’s Gin with Thomas Henry Tonic and Pink Grapefruit. It is a perfectly balanced tonic water that drinks surprisingly well on its own or as part of a gin and tonic.
Keeping with the Orange theme, Butlers Irish Chocolate have just released their latest flavour edition, a dark chocolate with orange and almond. Perfect for the darker evenings alongside a Drumshanbo G&T 🍊🍫

We’ve been loving this months Gin 🍊🍋
Joe distils his own base spirit from malted wheat grown on the farm. He uses Champagne yeast for a rich flavour and then the botanicals below are added to give Boatyard it’s unique flavour. Each of the botanicals are organic and the sweet gale herb is also sourced from Joe’s own family farm. The gin rests for a minimum of 2 weeks before bottling which is unusual but something that Joe says allows for a complete infusion.
A smooth organic, juniper led dry gin, with notes of citrus and floral sweetness.
Have you noticed some gins go slightly cloudy when you mix them? This is because they haven’t taken steps to make it clear. The pearlescent hue is called louche. Some distillers choose to keep it, others don’t like the appearance. You’ll spot the cloudy appearance here but it won’t affect or change the taste at all.

This month we are celebrating Irish again, and we are delighted to be doing so. Working in the Scottish highlands for the Glenmorangie whiskey company for over 10 years taught Joe McGirr about spirit production. The dream was always to come home, distil his own product and create his own gin. His family’s rich history in farming around Lough Erne in Fermanagh was the perfect backdrop and he has transformed an unused boatyard on the banks of the Lough into a distillery. They first started production in 2016 and today they offer tours and tastings to the public too. Perfect if you are planning a trip to the nearby Lough Erne Resort or the Tully Bay Holiday homes located nearby!
Rather than discard all of the botanicals after production, Joe founded The Proper Chocolate Company so that all of the flavours created in ‘Erainn’ (the name they give their copper pot still) can be added to a dark Tanzanian cocoa. Try the chocolate on its own, with a neat gin or with a gin and tonic!
You may have tasted the wonderful tonics from the Troughton family a few months ago. Now in their second generation, the waters are sourced from Co Armagh where the tonic is made by Philip Troughton and his family, who live to this day on the estate he grew up on. The family are well known for their ciders, apple juice and cider vinegar as well. We're so proud of this months box and we hope you love it at much as we do 🍸

INGREDIENTS:
25ml Pinkster Gin
20ml Pinkster Royale or any other Raspberry liqueur/Cassis
Top with Prosecco

DIRECTIONS:
Add gin and royal into a glass and stir.
Add a fresh raspberry
Top with Prosecco or champagne
Garnish a lemon curl
Enjoy 🥂

Stephen still personally oversees the production, ensuring consistency from batch to batch. Real fruit is at the heart of this gin. July is the perfect month to start enjoying a summery pink Gin. Stephen, the maker of is a keen forager and maker of sloe liqueurs and other concoctions, he turned his attention to gin and started experimenting at home, mashing assorted fruits with different spirit strengths. He wasn’t intentionally creating a pink drink, it’s just that after working his way through an entire fruit bowl, raspberry delivered the best flavour. After positive feedback on his 'real fruit' recipe from tastings at events and food fairs, Stephen took the plunge, quitting his job as a bean counter and ending his London commute. In this month's box we also included a raspberry chocolate bar to enjoy with your gin. is and Irish Organic and Dairy Free company so we're delighted to be able to show our support! You’ll also be wondering why there are two bottles of gin in your gin box. It’s summer and you might like to share some gin love by gifting a neighbour or friend a bottle of Pinkster – so this way there is one for you and one for them! It cocktail hour and this Bramble is our go to for a fruity gin cocktail using this months Gin 🍸
And it couldn’t be easier to throw together to impress your guests.
Ingredients:
45ml Scapegrace Classic
20ml Fresh Lemon Juice
10ml Sugar Syrup
10ml Creme de Mure

Method:
Shake the ingredients
Strain over crushed ice
Blackberry garnish

And in less than 3 minutes you have a delicious and fresh cocktail.

This months gin is the perfect addition to your bar cart. When creating it, brother-in-laws Mark Neal and Daniel McLaughlin had a calling to create a gin their way.
The pair came up with the idea for the Scapegrace business on Christmas Eve 2012, when they decided to make a gin to sell to Auckland bars. Gin was going through a resurgence in the United Kingdom but the wave had not yet hit New Zealand. Both had experience in the liquor industry and McLaughlin “kept pestering” Neal to leave the corporate world. They learned how to distil gin, then spent six months hand-delivering bottles to cocktail bars in Auckland.

“We both had a passion for gin and premium spirits and really wanted to create a global spirits company from New Zealand. New Zealand is such a fantastic country to build things, we thought it was a good opportunity create premium gin,” Neal said.
This gin can sing on its own and is best served with a wedge of orange and a classicly light tonic.
