It's that magical time again. It happens once every two years and fills the brewery with nervous excitement. It's Fathoms blending day.

We take the dozens of barrels down from their long sleep and see how the black gold inside has fared over the many seasons that they've been stashed away. From -10° winter nights to blistering Galway summer days (lol) these barrels breath and evolve with the seasons. We never know exactly how each barrel has evolved or matured so today is the day we sample each one and then test various ratios of the barrel contents to find the best blend. It can be heartbreaking sometimes as we discard any barrels we feel don't make the grade in terms of the flavour profile we are trying to achieve. It's a long day in the brewery but a rewarding one when it's all done and dusted as we know we have the next Two Hundred Fathoms edition on the horizon.

INTRODUCING REDBREAST 18 YEAR OLD
We are delighted to unveil the latest, permanent expression to the Redbreast family - Redbreast 18 Year Old.

Redbreast 18 Year Old draws inspiration from the aged inventory at Midleton Distillery while also embracing a diverse array of cask types to introduce to the Redbreast range. Crafted from malted and unmalted barley and triple distilled in traditional copper pot stills, this exceptional expression has been aged in a cask combination of ex-bourbon, oloroso sherry, cream sherry and a portion aged in ruby port casks.

Celebrating it's rich heritage, Redbreast 18 Year Old masterfully intertwines the signature charm of oloroso sherry butts and ex-bourbon barrels that have become synonymous with the brand, enriching the whiskey with its distinctive flavours.

Based in the hill town of Bolognano and its surrounding area, the Zaccagnini family have been in the grape business for many generations, but it was not until 1978 that they began to bottle the wine from their own grapes.

Brighten up this dull Tuesday with this newly released single pot still from Clonakilty Distillery🥃
Made from 100% Cork-grown barley, triple distilled in copper pot stills at Clonakilty Distillery, and matured in their Atlantic Ocean Warehouse.

This special whiskey was matured in ex-Bourbon, Amontillado and Oloroso sherry casks, the whiskey presents flavours of sweet vanilla and kiwi, complemented by notes of caramelised pear and dark chocolate.

Joes white wine recommendation for this week is the fabulous Santa Margherita Lugana.

Pale gold in colour with good body and mouthfeel. Big fruit flavours, yet elegant and superbly balanced with a really long finish.

He highly recommend this wine, it really is as good as it looks!

Beautiful to drink on it’s own or will pair with almost any food (particularly seafood cooked in butter).
