For us being independent means doing everything we can ourselves. Here .walsh.5030 is measuring the gravity, temperature and volume of an emptied cask to determine the alcohol level. We use hydrometers, thermometer and alcohol tables to do this. 🥃😀

Introducing the Roller. A single grain bottling we matured, emptied, cut and bottled Carlow Brewing Co .

Initial custard with a depth of flavor on the nose. Great texture and sweetness with a soft finish.

Introducing the Tippler, a bird with an innate ability to find its way home. A 12 year old single cask blend of grain and malt whiskies from two separate Irish distilleries.

Initially aged independently in bourbon casks and then blended into an oloroso sherry seasoned ex Californian 225L oak cask for well over 12 months before being disgorged, filtered and cut to drinking ABV by Flying Tumbler at Carlow Brewing Company.

Coming soon to a good independent off license near you.
