黎緊星期六 (1/6), 7:30pm, 誠意邀請到香檳酒莊Lete-Vautrain 嘅負責人Mr Eric de Brisis 主持一個全系列嘅試酒會，為時約1.5小時，費用全免。

我諗好多人都知，唔係任何一枝氣酒都可以叫做香檳。要係法國香檳區合乎法規而生產嘅酒先可以叫做香檳。

香檳嘅製作工序係瓶內二次發酵。發酵完成嘅時候，會移除酵母殘渣 (Disgorgement)，並加入適量糖漿用作平衡酸度 (Dosage)。

而如果天氣夠好，葡萄成熟度合乎理想，品質高，而且釀酒師功力夠深厚的話，會特別釀造一種不添加糖漿嘅香檳，即係 “Zero Dosage”。

Zero Dosage Champagne殘糖量極低，相反地，酸度會比一般香檳高，清爽，舒服，更容易配襯海鮮，尤其是甲殼類；而且由於無糖粉嘅修飾，更能表現出酒嘅風格同風土。

Lete-Vautrain嘅 Zero Dosage，使用40% Meunier，40% Chardonnay，20% Pinot Noir，並於瓶中陳釀4年。相對於一般香檳，採用上較大比例嘅Meunier，果感與酸度足夠平衡，亦由於有足夠嘅陳年時間，酸度高而不尖銳，層次豐富，氣泡細緻綿密。
