French Winery Trip – Champagne Andre Clouet🥂

Andre Clouet is a small independent Champagne house. Its history is very long, dating back to 1751. The Clouet family 's manor was built in Bouzy, the famous Pinot Noir producing area. The production of Blanc de Noirs champagne has also become the specialty of Andre Clouet Winery, and has established an excellent reputation.

Andre Clouet's vineyard is located among the only 17 rare Grand Cru vineyards in the Champagne region. It produces the highest grade grapes and is rare in quantity. In order to extract the most perfect grape juice, Andre Clouet still uses traditional wooden square presses and cumbersome brewing techniques that are time-consuming and labor-intensive.

has been cut from 100 percent to 10 percent.

Defaix Frères received its official organic certification from Ecocert in 2019 and employs organic and sustainable farming practices in all its vineyards.

In the winery, the Defaix family uses minimal intervention. They ferment with natural indigenous yeasts and utilize stainless steel tanks or old oak barrels for fermentation and aging. These practices allow each Defaix Frères wine to showcase its unique terroir and individual style. The wines are, and ever have been, authentic expressions of some of the Burgundy region’s finest vineyards.

Defaix Frères is a boutique, family-run domaine in France’s celebrated Burgundy region. With access to some of the best Premier and Grand Cru climats in Chablis and Rully, the estate produces beautifully elegant, high-quality wines from Burgundy.

The domaine was established in 1955, with only two hectares / five acres in Chablis’ Premier Cru Côte de Léchet. In 2003, Hélène Jaeger-Defaix inherited the estate from her great-aunt. Today, she runs Defaix Frères alongside her husband, Didier Defaix, and his brother, Sylvain.

Xavier Vignon Arcane La Justice 2020🍷

Arcane series is a limited edition made from Xavier, only produced in limited quantities. "La Justice" is the "justice" in the tarot cards and is also a symbol of balance. A Cotes-du-Rhone blend made from 70% Grenache and 30% Syrah but tasted much more complex and intense than a typical Cotes-du-Rhone red. It has a rich and deep aroma of berry fruits of blackberry & blackcurrant with nose of violet flowers. It is really concentrated on the palate, with a long finish revealing velvety tannins.
