The 2021 DAOU Cabernet Sauvignon displays a rich and exuberant nose with an abundance of ripe cherry, black plum, and Zante currants, accompanied by undertones of blackberry jam and crushed wet gravel.

Highlights of coffee and pencil shavings are rounded out with notes of dried desert sage and baking spices.

This cabernet is robust and full bodied on the palate with flavors of black cherry, cassis, and wild boysenberry. Subtle secondary layers of cranberry and blueberry are framed with hints of vanilla, black olive and fine leather.

Beautifully balanced and precisely structured around a core of ripe tannins, the velvety texture slowly fades with lingering flavors of blackberry, plum and cocoa.

the 2008 Mouton-Rothschild reveals classic notes of cigar box, forest floor, underbrush, vanillin, camphor, chocolate and abundant blackcurrant and blackberry fruit.
Beautifully finessed tannins coat the mouth, giving the wine a savory, expansive texture with no hard edges. It still has some tannin to shed, but this beauty is evolving quickly, displaying wonderful secondary nuances.
It should age for 25+ years.

Finally i got this, i was impressed by Mr. Stef during his master class in Wine and Sprit fair this year. And that was also my first taste of Sciara 980 metri. It was so lovely and i even cannot believe it is from Etna.

2016 Domaine Jean Marc & Hugues Pavelot La Dominode, Savigny-Les-Beaune 1er Cru,

About the wine：

The 2016 is no exception in terms of quality; La Dominode is one of the best sites in Savigny and Pavelot have one of the finest plots. Two thirds of their vines here are 70+ years of age and this imparts serious depth, complexity and richness to the finished wine.
Savigny-lès-Beaune La Dominode really showed the class of this vineyard”. The only negative is availability and with such scarce quantities available, once it sells, it will be near impossible to find again.

tasting note：

The aroma detailed with blackberry, briary, hints of black olive developing with time in the glass.
The palate is medium-bodied with fine grain tannin, a satisfying sense of symmetry with a poised and long, tensile finish.

Tasting Note: Fresh and vibrant with tart rasberry, undergrowth and a intriguing mix of mushroom and wet earth. On the palate quite smooth, with juicy acidity and medium tannins. The wood is very nicely integrated leaving a nicely rounded ending. This is drinking very nicely.

About the wine maker：
Thomas Morey 是著名勃根地白酒釀酒師 Bernard Morey (在 Chassange 備受尊崇，曾擔任兩任 Chassagne 市長)之子，2006 年父親退休後與哥哥 Vincent 接手父親的葡萄園各自創業，除了白酒之外，也釀造品質非常好的紅酒。2007 是獨立後第一個年份 。Thomas 的風格與哥哥不同，他喜愛 Domaine Roulot 般清脆足酸的個性，細緻不笨重，集中度強。

* 葡萄品種：100% Chardonnay。
* 風土：位於夜丘北端的Marsannay村，自古便被稱作「夜丘的金色大門」，是布根地罕見可以生產紅白與粉紅三種類型葡萄酒的特殊村莊。直到19世紀，當中許多地塊與今日特級園享有相同的崇高地位，成為路易十四餐桌上的常見酒款。冷涼的氣候，造就出優雅的柑橘類與白花香氣，細緻的礦物感與果味精巧均衡。
* 釀造：手工採收後進行兩次人工篩選，含梗比例依年份與葡萄狀態介於30%~100%，經過5~7天的低溫浸泡，以萃取出足夠的顏色與酚類物質，使用氣墊式壓榨機進行輕柔的壓榨，之後依靠原生酵母，在開口式的大槽進行3~4週的長時間發酵。再導入小橡木桶進行15~18個月的培養，新桶比例一級園大約20%，特級園則約30%~40%。裝瓶前不澄清不過濾。
* 來自酒莊位在Marsannay村的「Les Grasses Têtes」及「Le Grand Poirier」地塊，所在位置約海拔325公尺。黏土質土壤和大塊石頭為酒款帶來力量和冷峻感。葡萄園位置面東，可以充分吸收日照。礦物的鹹感風味近似酒莊的廣域級白酒，但質地更加成熟、飽滿。
* 香氣和口感皆清爽帶礦物感，綿延的香草、餅乾、桃子和水果，討喜的酸度和明亮的柑橘類水果。
