Koch Elemental Mezcal
An Artisanal Mezcal made exclusively with Espadin agave using traditional methods.
This particular type of agave must grow for 7-9 years to reach ideal maturity before being cut and cooked for 4 days in a conical stone oven.
Then the cooked agaves are crushed with a Tahona to produce a sweet juice that ferments in open wooden vats for 6-8 days.
This fermented juice is finally distilled twice in a 350-litre copper pot still and bottled at 40% abv.
Aromas of sweet smoke with notes of ripe fruits, herbal and minty with a hint of pineapple.
On the palate ripe peach and cinnamon with hints of white peppers.

wild-harvested sloe berries for 6 months in our gin.
We use 420 grams of sloe berries to make the liquid in every bottle, which is then gently sweetened with our favourite sustainably sourced sugar.

A blend of extra old unique cognacs all above 10 years old, and a good proportion over 20 years old.

EMPIRICAL SYMPHONY 6
Symphony 6 explores the potential of often underutilized leaves.
It plays with the fragrant flavor profiles of mandarin, lemon, coffee, black currant and fig leaves elevated by deep notes of ambrette seeds and vetiver roots.

EMPIRICAL THE PLUM, I SUPPOSE
Inspired by a line from Robert Frost's poem "The Rose Family", The Plum, I Suppose is a sweet, floral spirit distilled from a combination of pilsner malt, pearl barley and koji, using dried plum kernels and marigolds as botanicals.

Agave: A. Marmorata
Maturation: 12-15 years
Altitude: 1,020 meters
Oven: Underground conical oven for 4 days
Grinding: Horse-drawn
Fermentation: Six to eight days spontaneous in open-air cypress wooden vats
Distillation: 24 hours of double distillation for 100 to 120 litres, in 350 litres capacity copper stills with rectifier plates
Bottled at 46.31% abv
Mezcal Artesanal
EMPIRICAL AYUUK
The smoky Pasilla Mixe chili is the sole botanical and the source of all the complexity in Ayuuk
Sourced directly from Mixe farmers in the mountains of Oaxaca Mexico and macerated in a spirit made from Danish heritage purple wheat and pilsner malt
After distillation the best fractions are rested in a sherry Oloroso cask, allowing the flavours to infuse and mature with each other, giving a smooth distinct and savoury finish
