A lovely wine!

Notre vin rouge Temenos, en appellation Cornas, accompagne ici un dos de cerf rôti au beurre de noisettes, sauce réduite au coulis de betterave, velours de potimarron, mini Jack fondant et ses mendiants 🍷

Un vin doté d’un bel équilibre entre fraîcheur et puissance avec des tanins veloutés, qui s’accorde parfaitement avec une viande rouge aux saveurs fortes.

Y-a-t-il des amateurs de l’appellation Cornas par ici ? 😊

Partons du côté de notre domaine en biodynamie Combe-Pilate avec notre vin blanc, 100% Viognier.

Au nez, nous retrouvons des arômes de bergamote et de cailloux frappés. L’attaque en bouche est fraîche, dominée par la typicité aromatique du Viognier. Le milieu de bouche trouve son équilibre entre la tension liée au terroir d’origine et la générosité naturelle du cépage et de l’élevage. La finale est sapide, mettant en avant des notes agrestes et minérales.

Δροσιστείτε μ’ ένα ποτήρι Αγία Θέκλα από τη Σέριφο. Πολυποικιλιακό λευκό από Σεριφιώτικο, Ψαροσύρικο, Κέρινο, Αηδάνι, Ασύρτικο, λευκή Κουντούρα και Τσαμπάτο. Η εσοδεία του ‘20, έδωσε συνολικά 1.200 φιάλες.
Η καρδιά του ελληνικού αμπελώνα, χτυπάει στο heteroclito.

Colomé Lote Especial Pinot Noir es un vino único, estas partidas limitadas provienen de nuestra finca Altura Máxima a 3111 msnm. Las condiciones climáticas son extremas, con heladas tardías en primavera y tempranas en otoño. Plantamos variedades de ciclos cortos como el Pinot Noir.

A esta altura extrema la uva recibe mas sol y menor protección UV produciendo una piel más gruesa que brinda un final de boca mas robusto apoyado por una fresca acidez.

Colomé Lote Especial Pinot Noir this exquisite limited edition wine is cultivated from our Altura Máxima vineyard that sits at an altitude of 3,111 meters. The climatic environment here is unforgiving, with late frosts in spring and early frosts in autumn, with only short-cycle varieties such as Pinot Noir robust enough to thrive.

At such extreme heights, our grapes receive more sun and less UV protection: conditions that help to produce thick skins that provide a more robust finish supported by fresh acidity.
