Let's Go Vegan! - Baked Chilli Arancini Balls 🍲

Throughout January we will be sharing lots of yummy recipes to help you complete the challenge 🍃

Baked Chilli Arancini Balls
These rice balls are bursting with flavour
Serves 6 • Prep time: approx. 30 minutes, including 10 minutes' chilling time • Cooking time: approx. 1 hour, 20 minutes

Ingredients
• Olive oil
• 1 medium red onion, thinly sliced
• 3 cloves garlic, crushed
• 1 tbsp thyme (optional)
• 2 tbsp paprika
• Fresh chilli to taste, deseeded and chopped
• 1 tbsp ground coriander
• 400g tin of SPAR kidney beans, drained and rinsed
• 2 handfuls of SPAR baby spinach
• 400g tin of SPAR chopped tomatoes
• 1 vegetable stock cube
• 2 tbsp Demerara sugar
• 200g risotto rice
• Salt and pepper
• 80g breadcrumbs

Method
1. In a large pan, add the olive oil and cook the onion, garlic and thyme if using until the onion is soft. Add the paprika, chilli, coriander, beans and spinach and cook until the spinach has wilted slightly. Add a tablespoon of water if necessary.
2. Add the tomatoes, stock cube and sugar. Fill the empty tomato tin with water and add to the pan.
3. Cook for 10 minutes, then add the rice. Bring to the boil and reduce to simmer until the rice is al dente. Season and allow to cool.
4. Shape the cooled mixture into balls.
5. Put the breadcrumbs into a small bowl and roll the rice balls in them so that they are evenly coated.
6. Roll the balls in your hands until they are evenly shaped. Refrigerate for 10 minutes.
7. Heat the oven to 180°C/160°C fan/gas mark 4. Bake the rice balls for 20 minutes then remove from the oven, drizzle with olive oil and turn them over. Return to the oven for a further 20 minutes.
8. Serve with salad and a dipping sauce of your choice.

Let's Go Vegan! - Spicy Pasta with Mushrooms Recipe 🍲

Spicy Pasta with Mushrooms
A quick and easy low-fat dish
Serves 4 • Prep time: approx. 5 minutes • Cooking time: approx. 25 minutes

Ingredients
• 2 tbsp olive oil
• 250g SPAR mushrooms, thickly sliced
• 1 garlic clove, thinly sliced
• Small bunch parsley leaves
• 1 onion, finely chopped
• 1 celery stick, finely chopped
• 400g tin of SPAR chopped tomatoes
• ½ red chilli, deseeded and finely chopped
• 300g SPAR pasta of your choice

Method
1. Heat 1 tbsp oil in a pan, add the mushrooms, then fry over a high heat for 3 minutes until golden and softened.
2. Add the garlic, fry for 1 minute more, then tip into a bowl with the parsley. Add the onion and celery to the pan with the rest of the oil, then fry for 5 minutes.
3. Stir in the tomatoes, chilli and a little salt, then bring to the boil. Reduce the heat and simmer, uncovered, for 10 minutes until thickened.
4. Meanwhile, boil the pasta, then drain. Toss with the sauce, top with the mushrooms, then serve.

Let's Go Vegan! - Crunchy Baked Chickpeas Recipe 🍲

Throughout January we will be sharing lots of yummy recipes to help you complete the challenge 🍃

Crunchy Baked Chickpeas
Choose from a sweet or savoury version – or make both!
Serves 4 • Prep time: approx. 10 minutes • Cooking time: approx. 30 minutes

Ingredients for Sweet Chickpeas
• 1 x 400g tin of chickpeas
• 2 tbsp Demerara sugar
• 1 tbsp cinnamon
• ¼ tsp salt
• 1 tbsp SPAR vegetable oil

Ingredients for Savoury Chickpeas
• 1 x 400g tin of chickpeas
• 3 tsp paprika
• 1 tsp black pepper
• 1 tsp salt
• 1 tbsp SPAR vegetable oil

Method
1. Heat the oven to 200°C/180°C fan/gas mark 6.
Drain and rinse the chickpeas under cold water.
2. Dry the chickpeas thoroughly using kitchen towel.
3. Line a baking tray with baking paper. Lay the chickpeas on the tray and bake for 15 minutes.
4. Prepare your sweet or savoury coating by mixing the dry ingredients together.
5. Remove the chickpeas from the oven, drizzle over the oil and stir to coat them evenly.
6. Sprinkle on the sweet or savoury mixture. Stir to coat and return to the oven for 15 minutes.
7. Enjoy straight away or store in an airtight container at room temperature.

Let's Go Vegan! - Creamy Pea Soup Recipe 🍵

Throughout January we will be sharing lots of yummy recipes to help you complete the challenge 🍃

Creamy Pea Soup
A simple but flavourful soup that can be ready in minutes!
Serves 4 • Prep time: approx. 10 minutes • Cooking time: approx. 15 minutes

Ingredients
• 1 tbsp olive oil
• 1 medium onion, diced
• 2 cloves garlic, minced
• 1 leek, roughly chopped
• 1 stick of celery, roughly chopped
• 450g frozen peas
• 700ml vegetable stock from a cube
• 1 tbsp balsamic vinegar (optional)

Method
1. Heat the oil in a medium saucepan and sauté the onions and garlic until softened. Add the chopped leek and celery and cook for a further couple of minutes.
2. Stir in the peas, then add the stock and balsamic vinegar, if using. Season with salt and pepper and simmer for 5 minutes.
3. Transfer to a blender and mix until smooth.
4. Ladle the soup into four serving bowls and serve with crusty bread.

Potato & Mushroom Curry
Create this spicy dish in less than half an hour
Serves 4 • Prep time: approx. 10 minutes • Cooking time: approx. 20 minutes

INGREDIENTS
• 1 tbsp SPAR vegetable oil
• 1 onion, roughly chopped
• 1 large potato, chopped into small chunks
• 1 aubergine, trimmed and chopped into chunks
• 250g SPAR mushrooms
• 2-4 tbsp curry powder (depending on how hot you like it)
• 150ml vegetable stock from a cube
• 400ml tin of coconut milk
• Chopped coriander, to serve (optional)

METHOD
1. Heat the oil in a large saucepan. Add the onion and potato, cover the pan and cook over a low heat for 5 minutes until the potato starts to soften.
2. Add the aubergine and mushrooms, cook for a few minutes, then stir in the curry paste, stock and coconut milk.
3. Bring to the boil, then simmer for 10 minutes or until the potato is tender.
4. Stir through the coriander, if using, and serve the curry with rice.

Let's Go Vegan! - Banana Bread Recipe 🍌

Throughout January we will be sharing lots of yummy recipes to help you complete the challenge 🍃

Banana Bread
Use up over-ripe bananas for this bread
Serves 8 • Prep time: approx. 15 minutes • Cooking time: approx. 40 minutes

INGREDIENTS
• 4 large ripe bananas
• 75ml SPAR vegetable oil, plus extra for greasing
• 100g brown sugar
• 225g SPAR plain flour
• 3 heaped tsp baking powder
• 3 tsp cinnamon or mixed spice

METHOD
1. Heat oven to 200°C/180°C fan/gas mark 6. Mash three of the bananas with a fork, then mix well with the oil and brown sugar.
2. Add the flour, baking powder and cinnamon or mixed spice, and combine well.
3. Oil and line a 2lb loaf tin. Spoon the banana mix into the tin and level the top. Slice the remaining banana in half lengthways and press the pieces into the top.
4. Bake for 20 minutes. Check and cover with foil if the bread is browning too quickly.
5. Bake for another 20 minutes, or until a skewer comes out clean.
6. Allow to cool a little before slicing.
