Mini Egg Easter Cheesecake… the ultimate Easter treat! 🐣

Indulge in a creamy, dreamy Philadelphia cheesecake, topped with everyone’s Easter favourite: Mini Eggs! Who’s ready to dig in? 🐰

Here's the recipe (don't forget to screenshot!):
Serves: 12
Prep Time: 30mins
Total Time: 4hrs 30mins

Ingredients:
• 280g Chocolate Digestives
• 140g butter (melted)
• 2 x 296g bags of Cadbury Mini Eggs
• 560g Philadelphia Original
• 600ml Double Cream (lightly whipped)
• 160g Icing Sugar (sifted)
• Juice of half a lemon

Method:
Step 1. Place the biscuits in a food processor and whizz into crumbs
Step 2. Stir in the melted butter until the mixture resembles damp sand. Press into the base of a 20cm springform tin.
Step 3. Roughly crush 250g of Mini Eggs. Place in a bowl and add the Philadelphia, all bar 3 tablespoons of the whipped cream, icing sugar and lemon juice. Fold gently until fully combined.
Step 4. Spread the mixture over the top of the biscuit base and smooth the top with he back of a spoon or a palette knife.
Step 5. Chill for at least 4 hours or overnight.
Step 6. Carefully remove the cheesecake from the tin. Dollop the remaining whipped cream on top and decorate with the Mini Eggs.
