Learn how to identify and harvest delicious fresh forest greens and herbs along the river Esk in Musselburgh.

Spring has finally sprung and the forests and hedgerows are bursting with lush greenery to tantalise those tastebuds.

So, if you are a novice forager looking to find out about all the delicious treats available from the wilds around you why not join Buck & Birch wild flavour expert Rupert as he guides you though our fields, forests, coastlines and hedgerows in pursuit of the very best wild ingredients.

Learn first hand how to identify and harvest a host of ingredients whilst enjoying a host of wild foraged snacks and drinks throughout.

Each season Rupert will venture out to local wild locations to show you just what’s out there - first up Late Spring!

Few cocktails are as sophisticated or satisfying as a Martini. Making them at home can be a bit of a faff. Not anymore! Introducing the One-Pour Martini. All you need is a bottle of BIRCH wild botanical spirit, a freezer and a chilled glass.
AS EASY AS ONE, TWO, TREE...
STEP 1: Freeze for a couple of hours at least
STEP 2: Pour into glass. No need for vermouth – the botanicals in BIRCH season, while the sap gives this Martini a viscosity and mouthfeel that is stunning.

Rejuvenating Scottish woodlands

If only it was as easy as planting a tree for every bottle sold.

Trees are great, they are beautiful and integral to any forest. They clean our air, produce oxygen for us to breath and their roots systems stabilise and secure our land.

But trees alone won’t fix our sustainability issues. We need a much more involved strategy to ensure the right tree species are being planted and a long term plan is in place to look after them and the forests they create. We also need to educate and engage everyone back into nature.

At Buck & Birch we work hand in hand with community groups, crofters and landowners to build an integrated harvesting plan which will help protect and enhance our wild spaces for future generations to enjoy. Beyond planting trees we run community engagement projects, native plant regeneration days and ecological studies looking at the impact of our relationship with the forests.

Since the launch of BIRCH botanical spirit back in 2021, we have been lucky enough to get our glorious, fresh birch sap from Gifford Community Woodland in East Lothian.

Playing such a vital part of the drink (60% of every bottle is pure, raw, birch sap) we take great care to look after this amazing commodity.

Two years ago Rupert and woodland manager Neville Kilkenny, began our study of the effects on the trees we have tapped. By measuring their annual growth and checking for any signs of infection or illness, as well as geo-tagging them, the aim is to improve yields and consistency of harvest whilst minimising any long term damage.

This is marks the first phase of our commitment to build a company that creates great drinks, celebrates the wilds of Scotland and protects our forests for future generations to enjoy.

Panda & Sons shortlisted for UK’s best cocktail with Aelder

Every year Class Bar Magazine hold their prestigious Bar Awards, celebrating the breadth of talent and creativity in the UK bar scene.

This year we are delighted to see our good friends Panda & Sons nominated for no less than 4 awards - high praise indeed for a bar already crowned in the world’s top 50!

The one we are particularly happy to see is in the Best Cocktail category, for their Wilderness creation featuring our very own Aelder wild spiced Elderberry liqueur!

From the very beginning Iain McPherson and his team have been so supportive of Buck & Birch and our products which has given us great confidence to forge ahead.

We wish them all the very best for the awards and we urge you all to pop by their fantastic bar and see for yourselves what all the fuss is about!

As well as Panda & Sons we also want to congratulate our friends at Nauticus Bar and Bramble for their nominations in the Best Bar Scotland & Northern Ireland category.

Japanese Quince and Grand Fir Liqueur - 22.5%ABV

The label and name may have changed but not the fantastic flavour of our quince liqueur.

Originally launched as a limited release last autumn, we have been inundated with eager fans looking to top up their supply, so here it is.

The sweet, floral, pear-like flavour of quince is perfectly balanced with the grapefruit vibes of the grand fir for a liqueur bursting with seasonal flavour - perfect over ice as an after dinner drink or topped with prosecco.

"And the name?", we hear you ask?

The quince was an ancient fruit known to the Greeks and Romans who dedicated it to Venus and Aphrodite. To them it was a symbol of love, happiness and fertility often used in marriage ceremonies.

Now, whilst we can't promise future nuptials will ensue from drinking our liqueur, we are confident those who try it will fall in love with the flavour and don a satisfyingly happy smile as a result.

To say we're excited for this is an understatement.

After a year of scouring land and sea across Scotland, Rupert is once again donning his chef's whites to bring the Buck & Birch Festive Feasts back.

Teaming up once again with Papple - East Lothian's newest luxury venue and retreat, we bring you an evening of unrivalled flavour and decadence, celebrating the finest in wild Scottish ingredients.

Held in the beautiful Steading, guests will enjoy a canapé and drinks reception before sitting down to a 7 course wild tasting menu, championing the finest seasonal game, seafood, fungi, winter fruits and vegetables East Lothian has to offer.

Accompanying the dishes will be a bespoke drinks flight, designed using our award winning spirits and liqueurs, along with some fabulous wines selected by Eri, Papple's resident wine expert. A non alcoholic drinks flight is also available, crafted from our extensive wild apothecary at Buck & Birch HQ.

So, if you are looking for a fantastic festive treat full of wild flavour and winter cheer to share with family, friends or work colleagues this winter, you know where to come...
