Great to be working with The Goat at Long Buckby and great news for local craft beer enthusiasts 🍻 The Goat, a new micropub specialising in craft beers, has officially opened its doors at 2 High Street, Long Buckby. For husband and wife team Richard and Laura Mitchell, its been years in the making, and is also a collaboration with Three Hills Brewing with whom they created their own craft beer, 'I Goat This', bringing this independent taproom to life.

The Goat aims to be a welcoming, fun, and community-focused spot. Community support has already been amazing. Having hosted a soft launch for friends and family at the end of February, The Goat officially opened to the public, with live music and a packed house, on 1st March.

Today's Spring Equinox is a special day for us as it marks the creation of our Equinox Whisky. Just look at today's sunlight on that amber liquid! Beautiful.

Our rare release was filled into an ex-Port cask on the Spring Equinox 2020 and matured until the Autumn Equinox 2023. With only a handful of casks filled each year, Equinox Whisky is a true limited-edition expression of our craft.

The small cask ageing has worked its magic, intensifying the flavours over 3.5 years. The result? A whisky with an insanely rich complexity, bottled at 43.4% ABV—perfect for sipping neat or with a splash of water to unlock its full depth.

This week Laurence had the privilege of representing Wharf Distillery at the 2nd English Whisky Day, held at the Houses of Parliament and hosted by MP Kevin Hollinrake and the English Whisky Guild. This fantastic event brought together 250–300 guests, including parliamentarians, business leaders, and trade and export representatives, to champion the exciting future of English whisky.

We showcased our Equinox Whisky, highlighting its rich, complex flavour profile and unique port cask finish. It was great to see growing recognition for the English whisky industry and to discuss how we can continue pushing boundaries in craft distilling.

As one of English Whisky's smallest producers, it was especially good to be able to showcase the diversity of producers in English in terms of size, scale and innovation and proving that you don't have to be multi-million pound to produce great whisky.

A huge thank you to everyone who stopped by to chat and taste—your enthusiasm for English whisky is inspiring 🥃🥃

We thought you might like to hear how we make our Aeppel Drenc spirit 🥃🍏 It's our English apple brandy and we make it using our own aged cider which is usually several years old before being distilled. All the apples were grown and hand-picked from an orchard in Nether Heyford. They are 100% culinary and dessert apples typically containing lots of classic varieties such as Bramley, Cox, Jonagold, Braeburn, Egremont russet, Falstaff and Ashmead's Kernel.

The apples are cold pressed and then fermented on wild yeast. Fermentation can take a few days for the early-harvested varieties during the end of the warm summer, or many weeks for the later varieties during the cooler winter months. During cold winters the fermentation can stall until spring when the warmer weather brings the yeast back to life.

The cider is then stored in large vats until ready to distil in our copper pot stills. Typically we do at least 2 distillations to produce a smooth spirit packed full of pure, unadulterated apple flavour.

Aeppel Drenc (original) - Pure, smooth, and uniquely crafted English Apple Brandy.

Aeppel Drenc Oak Aged – this little beauty has been aged in an ex-Madeira octave for over 4 years creating a unique, rich, indulgent spirit with flavour notes of stewed apples layered with honeycomb and sweet caramel.

🎤 MEET THE MAKER🎤 Many of you will know Laurence and the story of Wharf but for anyone who doesn’t yet we thought you might like to read this feature by The Gin Guide who interviewed Laurence last year:

“We caught up with founder and distiller Laurence Conisbee to find out more, including: how it all started, the story behind the name, the distillery and botanicals, what visitors can experience, and what exciting plans are ahead, and more!”

Q/ What did you do before establishing your distillery?
Having begun my career as a cartographer, making maps for the military, I moved into general IT where I remained for around 25 years. I then got out of IT after starting to make cider commercially in Milton Keynes alongside the Grand Union Canal.

Q/ What made you decide to open a distillery?
A logical next step from cider-making was distilling it into apple brandy. We played around with processes and equipment, initially working with another fledgling distillery, before obtaining our distilling licence, and our own alembic stills from Portugal.

Q/ When and why did you start making gin?
We didn’t start making gin until 2017 when we decided to stop making cider and focus on distilling. Safine Drenc was our first gin and was influenced by a combination of my spiritual home of Norfolk, England and the Saxons. Our subsequent gins take inspiration from the botanicals that grow in specific areas around the distillery and our home in Northamptonshire

Q/ What is the meaning and story behind your brand name?
Our distilling journey began when we were located on Galleon Wharf alongside the Grand Union Canal in Old Wolverton, Milton Keynes. Ironically it was only when we relocated into Northamptonshire, and focused on distilling, that we decided to use the word Wharf in our name.

Q/ Can you tell us more about your stills?
We currently operate 2 stills: a 300L copper alembic from Portugal and a 250L Kothe hybrid still from Germany. We opted for smaller stills to really optimise the contact that the spirit has with the copper whilst getting reasonable size batches…

We’ve had a busy start to the year, distilling and bottling bespoke white label spirits for one of our contract customers. We're nearly ready to ship 8 pallets of premium craft spirit overseas to fulfil that order. That’s 4000 bottles heading out the door, destined for far-away lands 🙌

Our bespoke distillation option enables you to create a unique spirit made to your own botanical recipe and distilled on our copper pot stills. The first stage is to agree the spirit and the botanicals you would like to use and to create a base recipe. The next stage is an interactive Proof of Concept session whereby you will come to the distillery and together we will distil a small batch on our POC still. This session takes around three hours, and you will leave with around 5L of your spirit for market testing. It is usual to move from POC straight to production with maybe one or two minor tweaks to the recipe.

It’s the most creative way to produce your own label spirit. We keep our MOQ’s low so that we can help you start and help you to grow.
