This is one of my favourite cheese stories .. there’s this American nun, Sister Noëlla, who makes cheese. She was given an ancient French recipe, and a wooden barrel to make it in.

Now, in the mid eighties, the state health inspector demanded that Sister Noëlla replace her wooden barrel with stainless steel. However, to demonstrate the positive effects of the wooden barrel, Sister Noëlla made 2 batches of cheese from raw milk, but this milk, she deliberately infected with E. coli.

The cheese from the sterile vat had high levels of E. coli, but the cheese from the wooden barrel had next to none … the ‘good’ bacteria had outcompeted the E.coli, creating an environment in which it couldn’t survive …. the health inspector relented and allowed Sister Noëlla to keep making cheese in her wooden barrel … 🧀🧀🤗
