Promis Gaja, Tuscany

Promis is fruit-driven, mainly wild fruits: raspberry, black currant, and blueberry.
Pink peppercorns and liquorice notes come forward on the nose.
This wine is medium bodied with round tannins and refreshing acidity. It opens with aromatic herbs, followed by blackberry and black cherry ending with a deep red colour

Vineyards
The vineyards are focussed in Bolgheri and the neighbouring area of Bibbona, with vines mainly planted on dark soils full of lime and clay.

Winemaking
The grapes were handled with particular care with extremely soft pressing of the bunches and helping to shorten the maceration process. The three varieties ferment and macerate separately for around 15 days. After 12 months of ageing in oak, they are blended and then aged for several months in the bottle before release.

Errazuriz Elite Pinot Noir 2020
Las Pizarras is one of the most innovative projects in the recent years, with a great sense of origin and the equivalent of a Burgundy Grand Cru, which highlights the characteristics of Aconcagua Costa.
Its name derives from the high percentage of metamorphic slate rock that is present in the vineyard.

Tasting Notes:
Las Pizarras Pinot Noir 2020 displays a stunning ruby red colour with violet highlights.

It has a complex nose that evokes rosehips, Chilean guava (murtilla), tart cherries, and refreshing spice tones, accompanied by light notes of coffee beans and nuts.

The palate presents red fruit notes that give way to touches of spices and flowers, some damp earth and berry tones, along with sweet spices and a touch of toasted nuts.

A very well structured wine with an enjoyable, chalky texture that, true to its identity, is elegant and persistent on the palate

Corton for Christmas Day

The Côte de Beaune’s only red grand cru appellation, Corton is produced from one of Burgundy’s most iconic spots – the eponymous Montage de Corton.

Tasting Notes:
The classic Corton red wine is rich and relatively tannic, meaning that it is quite austere in its youth but develops well with age. Corton tasting notes often refer to flavours of violets, forest berries, leather and earthy notes.

Domaine du Colombier
Chablis Premier Cru Fourchaume 2022

The Domaine du Colombier is located 4 km from Chablis in Fontenay-Près-Chablis, a village of 140 inhabitants hidden behind the grands crus.

The Domaine du Colombier has been a family property since 1887, handed down over several generations.
In 1957 Mr Guy MOTHE started to specialize in vinifying Chablis.
Today his three sons, Jean-Louis, Thierry and Vincent work the 55 hectares of vines.

These vines are planted exclusively to Chardonnay, and produce dry white wines that are clear, lively and light, with a yellow robe characterized by hints of subtle white-green.

Tasting Notes:
Rich in fruit citrus aromas, perfectly dry with a minerally finish.
Fantastic length in the mouth which seems to last forever.

Suggested Food Pairings:
Excellent with scallops, fish in sauce and white meats
