Impromptu Austrian Tasting!

Any plans for next Wednesday? Really looking forward to seeing Georg from Preisinger winery- would love some of you to meet him and his wines. I was out in Neusiedlersee, Austria this time last year and really loved his spirit and dedication to his vineyards. We'll taste through a range of 6 fascinating wines, from white, to red, to sticky and hear all about his methods- including 'Agnihotra'- a nightly ritual involving burning cow dung soaked in ghee to provide ash to spray throughout his vines.

A great character with a striking range of wines to share. The tasting is free, limited to 20 places - please reply if you'd like to join us. First come first served!

I've just sent the final line-up of the Grand Tasting off to print. An immaculate collection of 100 elixirs to bring a smile to the sternest face, a tear to the driest eye and a stir to the stillest soul.

I envy you. I’ve tasted each of the glorious creations that await and wish I could taste them all again for the first time. A bit like a first kiss. And much like those first kisses, not all will be to your liking, but you may well kiss one you’ll want to spend the rest of your life with! Some hot offers, some amazing discoveries, some great characters. What greater way to kick off the countdown to Christmas than by spending a Sunday afternoon supping away, stumbling across liquid beauty you never knew existed?!

Remarkably, we still have tickets left, so a) what's the matter with you all? b) call quick to grab 'em before we're full.

Last call for De:Book Club! Tuesday 5th November from 7pm-9pm.

You may struggle to read 380 pages between now and next Tuesday, but you can always cheat and just watch the film instead! It's quite something, with an Oscar-winning performance by Emma Stone. Some very interesting themes to discuss and great enlightenment to be revealed!

We've cheated too- Philippa will be presenting a couple of wines from Lisbon (which features in the film but not the book!) which we'll serve up with some salt cod croquettes.

World Champagne Day 🍾🥂

The fourth Friday in October celebrates all things Champagne. To jump on the bandwagon, we’re offering our house Champagnes - Delavenne Brut Reserve & Delavenne Rosé Marne - by the glass at £10 all day and evening!

8 years ago today, this chapter of Define began. Thanks to all the staff that contributed over the years, and you lovely lot who have joined us for the ride. A steep learning curve and a few tweaks along the way- you can see the toll that 8 years of running a restaurant takes on a human- this was Jon the night before it kicked off! 👴🏼🍾

Many of you have been asking after the wellbeing of Sami and his family out in Lebanon. All are currently safe and well, if rather shaken by developments. We threw in our margin to offer a 20% discount on the Massaya range to encourage you all to lend your support. On reflection, we think this saving would be more gratefully received by the Lebanese Red Cross.

De:FINE began as a wine merchant back in 2000, and wine still courses through De: Veins (sorry!) Our restaurant was launched back in 2016 in part to showcase our extensive range and offer a reckless selection by the glass. There is much expertise amongst us to help you navigate the +1500 wines that surround you.

Liam (see pic), a former Head Sommelier at Michelin-starred Northcote Manor, has curated a list of our favourites so you don't have to get out of your seat. Many of the staff have wine qualifications, whilst Liam is on hand on Wednesday and Friday evenings to offer expert guidance and suggest wines to match whatever you order.

The more confident amongst you are encouraged to go wonder- choose a bottle off the shelf, to which we charge a modest £12.50 corkage (the same applied to our wine list). We are genuinely hard-pushed to think of any restaurant in the country that offers such a compelling selection at such low prices.

A few late cancellations leaves us with a few empty tables tonight- a rare'un for a Friday night! Head in for an impromptu nibble! Some cracking specials on too, including this: pigs cheeks braised in Rioja, on scorched polenta. I can confirm, it's bloody delicious. 😋

De:Books: Chapter 3
Tuesday 5th November 7pm-9pm (expect fireworks!)

A deviation from the classics we've looked at so far, we're going contemporary with this one: Poor Things by Alasdair Gray. Yes, this is the book of the film that Emma Stone won Best Actress at the Oscars for, and, if you’ve seen the film, you know it’s going to be an interesting one! Howard, our esteemed literary leader, is as excited as we’ve ever seen him (can you hear the dramatic irony)?!

As usual, there will be two wines and some wine education on the region that tenuously links to the book, as well as some food to accompany the book chat.
De:Books is building a deserved following- what a wonderful way to while away a Tuesday evening.

As the book flits from Glasgow to Lisbon, we'll serve up some salt cod fritters at 'half time' (unless you'd prefer a deep-fried mars bar!), with a few glasses of Lisbon wines to boot.

October's Wine Wednesdays

Weds 16th Oct - Old World v New World: Part II
Comparing the same grape varieties but from different parts of the wine making world, all served blind! Spot the difference between Syrah and Shiraz? Pinot Grigio and Pinot Gris?

Weds 23rd Oct - Liam's Favourites
A theme that often gets brought up! What does Liam drink? What are his favourite grapes? Favourite Region? Best wine ever tasted?

As usual, evenings start at 7pm and feature 6 glasses of wine plus a few nibbles from the deli to tide you over. You could also extend your evening by dining with us beforehand or afterwards and get 15% off the food bill - happy days!

Tickets are £25 per person and are available to book in the shop or over the phone. Come as a group, come as a couple or come on your own, they're always laid back and a fun way to spend a midweek evening.
