Ever wondered what gives your favorite Chardonnay that creamy, buttery goodness? It's all thanks to a fascinating process called Malolactic Fermentation (MLF)!

Malolactic Fermentation is a natural secondary fermentation process that occurs in some wines after primary fermentation. During this transformation, tart-tasting malic acid (think green apples) is converted into softer, smoother lactic acid (think creamy butter)

While not all wines go through Malolactic Fermentation, it's commonly associated with fuller-bodied whites like Chardonnay and some reds like Pinot Noir and Merlot. Winemakers may choose to encourage or inhibit MLF based on the desired style of the wine.

Malolactic Fermentation isn't just about flavor; it also plays a crucial role in wine stability and microbiological safety. By reducing acidity and producing more complex flavor compounds, MLF can enhance a wine's overall quality and aging potential.

HAPPY WORLD MALBEC DAY // today is a day to celebrate one of the world's most loved grapes.

Malbec (sometimes called Côt and Auxxerois) is from France, where it grows in the Sud-Ouest. Today the majority of France’s Malbec is found in Cahors, a small town on a switchback river that gently flows towards Bordeaux.

However, because of the grapes’ poor resistance to weather and pests, it never surfaced as a top French variety. Instead, it found a new home in Mendoza, Argentina where a nostalgic French botanist planted it by order of the mayor in 1868.

Today, Argentina leads production of the grape with over 75% of all the acres of Malbec in the world. In a way, Argentina reinvigorated Malbec as one of the top 18 noble grapes.

There has been a station on the main line Douro railroad at Quinta do Vesúvio since 1887 and the trains that call daily are very much part of the property’s day to day life. It felt only right to celebrate the coexistence between railway and vineyard. The ‘Comboio do Vesúvio’ (Vesúvio Train) is unoaked to underscore the wine’s youthful, fruit forward profile.

Altano Branco, Symington Estates, Douro Valley, Portugal - £10.99
This wine is produced from grapes grown in higher altitude vineyards where cooler temperatures provide the ideal conditions for the even maturation of white grapes. The result is a zesty, aromatic wine with tropical fruit and crisp acidity.

WINE JARGON WEDNESDAY // wine can be confusing and complicated, but it needn’t be! So each week we’ll help bust that jargon.

"I've heard blended wines arent as nice as wines made with one grape." WRONG - and don't be so silly!

Wine blending is an age-old winemaking method that has been practiced for hundreds of years. Wine blends are popular because of their variety and mix of flavours. However, most people are unaware that some of the world's most well-known wines are blends.

Popular blends include:

Red Bordeaux = Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, & Petit Verdot
Chateauneuf-du-pap = Grenache, Syrah, & Mouvedre
Champagne = Chardonnay, Pinot Noir & Pinot Meunier,

Blends have more components, by definition. A fine GSM (grenache, syrah, mourvèdre) brings three grapes to the party which might mean more complexity.

Blending also helps to make the same wine style, consistently, year after year, as winemakers can call on other grapes to join the blend. If it’s a poor year for, say, grenache, then the syrah might have fared better and can step in with a higher proportion that vintage.

Blends can sometimes achieve a greater harmony (again, arguably), with, for example, a more acidic grape like sauvignon blanc marrying nicely with the richer semillon to make for a fine balance.

INTERNATIONAL SYRAH DAY // thats shiraz to you and I.

A rich, powerful, and sometimes meaty red wine that originated in the Rhône Valley of France. Syrah is the most planted grape of Australia, where they call it Shiraz.

Darker meats and exotic spices bring out the fruit notes of Syrah. Try it with Lamb, Gyros, Asian 5-spice pork, and even Indian tandoori meats.

Gorgeous Old Vine Shiraz, Thistledown, South Australia - £16.29

Not your average Shiraz! On the nose there are peaches, ripe nectarine, wild raspberry and a little spice. The palate is soft and slurpy, the texture silky and any tannins just add a little seasoning – like macerated strawberries and black pepper.

PRODUCER SPOTLIGHT // our first of the year, and its a good'un.

The quality of wine coming out of South Africa at the moment is quite exceptional, and some of the most memorable wines we have tasted in the past year have been the red wines from Holden Manz in Franschhoek.

Their flagship Bordeaux style blends (with added Syrah), Big G and Visionaire, have won multiple awards. The Vernissage is classed as their entry wine, but we think there are many estates who would like a wine this good as their top cuvée. All are barrel aged, richly textured and very classy.

New world wines... how many worlds are there, and how are they delivering wine through space?

'New world' refers to countries and winemakers that have borrowed traditions from other countries to jumpstart their own. More often than not, this happened alongside colonization. Since the colonizers were European, they brought their winemaking traditions with them.

Over time, through circumstance or creativity, these folks threw out many old ways and developed new ones. New world wine was born.

Furmint is one of the most important Hungarian varieties famously used in Tokaji Aszú dessert wines, but also available as a dry wine in a similar in style to Riesling.

Works great with white meat, fish, and asian dishes like sushi or dumplings.

WINE JARGON WEDNESDAY // wine can be confusing and complicated, but it needn’t be! So each week we’ll help bust that jargon.

You know that feeling when you drink a glass of wine, then your gums start throbbing and your mouth feels as dry as a desert... that's becasue of tannins.

Tannin is a naturally occurring polyphenol found in plants, seeds, bark, wood, leaves, and fruit skins. Other foods with tannin inlcude: tea leaves, walnuts, almonds, dark chocolate, cinnamon, clove, & pomegranate.

When it comes to tannins, wine picks them up from two main sources: the grapes and the wood of the wine barrels. Once a wine is bottled, it begins the aging process. Over time, the tannins will begin to form long chains with one another on a molecular level. How this affects the flavor of your wine depends on how well balanced the tannins are in the bottle - more specifically, the balance between the tannins from the grapes needs to be well-balanced with the tannins from the wine barrels. A well-balanced wine will get smoother over time while a not-so-well-balanced wine won’t change much at all or may even become more astringent.

The astringency of tannin is a perfect partner for rich, fatty foods. For example, tannin cuts through the intense meaty protein of a dry-aged fat-marbled steak, permitting subtler flavors of both wine and food to emerge.
