Mini Egg Easter Cheesecake… the ultimate Easter treat! 🐣

Indulge in a creamy, dreamy Philadelphia cheesecake, topped with everyone’s Easter favourite: Mini Eggs! Who’s ready to dig in? 🐰

Here's the recipe (don't forget to screenshot!):
Serves: 12
Prep Time: 30mins
Total Time: 4hrs 30mins

Ingredients:
• 280g Chocolate Digestives
• 140g butter (melted)
• 2 x 296g bags of Cadbury Mini Eggs
• 560g Philadelphia Original
• 600ml Double Cream (lightly whipped)
• 160g Icing Sugar (sifted)
• Juice of half a lemon

Method:
Step 1. Place the biscuits in a food processor and whizz into crumbs
Step 2. Stir in the melted butter until the mixture resembles damp sand. Press into the base of a 20cm springform tin.
Step 3. Roughly crush 250g of Mini Eggs. Place in a bowl and add the Philadelphia, all bar 3 tablespoons of the whipped cream, icing sugar and lemon juice. Fold gently until fully combined.
Step 4. Spread the mixture over the top of the biscuit base and smooth the top with he back of a spoon or a palette knife.
Step 5. Chill for at least 4 hours or overnight.
Step 6. Carefully remove the cheesecake from the tin. Dollop the remaining whipped cream on top and decorate with the Mini Eggs.

We love ... Exeter Safe Space which provides free support to people out and about at night time 🌙

Located in St. Stephens church on High Street, right at the heart of Exeter’s bustling night scene, the Safe Space is funded by InExeter, the Community Safety Partnership and Safer Streets Fund 4. It is open on Wednesday (term time), Friday and Saturday –from 23:00 to 03:30am.

The support service is a warm and welcoming space for people who find themselves in need on a night out in the city. The space serves three main purposes of, light medical treatment (cuts, sprains, recovery, blisters), welfare support (such as phone charging, water, safety alarms, bottle tops, change of clothes) and a safe warm place to wait for night buses, or friends.

Are you keen to get involved and help out or find out more about Exeter Safe Space? Join them for the launch of their volunteering programme on Tuesday 21st February at St Stephen’s Church on Exeter High Street between 18:00 – 20:00. Information will be provided on what a usual shift looks like as well as what experience you will gain and training available including mental health and safeguarding.
