This bottling is Glenmoragnie's first EVER whisky to be matured in Palo Cortado sherry casks 😮! Palo Cortado is a particularly fascinating type of sherry. . . it begins life ageing under flor (like a dry Fino or Amontillado sherry) but ends it's life without flor, oxidatively ageing (like a fuller, sweeter Oloroso sherry).

This dram has spent it's first 8 years maturing in bourbon casks before a loooong finish in Palo Cortado casks 😍

🍇LET'S TALK ABOUT SHERRY🍇

The seasoned cask 🧂!! Most of the sherry matured whiskies we make in Scotland use sherry seasoned casks instead of casks taken from a solera system. A seasoned cask is as it sounds, it's been seasoned with sherry 😋. Sherry will be kept in these casks from a few months to a few years (at the very most) before this liquid is tipped out. Sometimes reused to season more casks or sometimes going on to make vinegar😲
Whilst this might feel like a bit of a cheat, in many ways these casks are more similar to the transportation casks we used to use in the whisky industry. These casks would arrive full of sherry from Spain (and would NOT be a prized solera cask) which we would then refill with other products including whisky🥃! Casks have been used for centuries to move products around the world and whisky was no different, ship it to your customers across the sea using a sherry cask and viola! A fruity flavour from a few months in the sherry soaked wood ✨

🍇LET'S TALK ABOUT SHERRY🍇

Sherry makers use the solera system to mature their sherry. Solera maturation is, in very basic terms, a kind of fractional blending🛢

Barrels are stacked in tiers (called criaderas) with the youngest sherry at the top and the oldest sherry at the bottom🍷Sherry ready to be bottled is taken from the bottom tier and then is replaced by sherry from the next tier up which is in turn replaced from sherry from the next tier up and so on. This blend is constantly evolving, being added to and taken from. This means sherry producers are not so keen on giving up these casks, they've acclimatised to the specific liquid and cellar conditions the Bodegas want and they will keep these casks in their solera system for decades - often until they are goosed 😴!

Whilst the whisky industry does acquire these casks from time to time, they are rare and pricey. . . . .how does the industry get round this? Check in tomorrow for more sherry facts 🥃

🍇LET'S TALK ABOUT SHERRY 🍇

Sherry is a style of fortified wine that must be made and bottled in Spain on the southwestern coast encompassing the towns Sanlúcar de Barrameda and El Puerto de Santa María, as well as Jerez de la Frontera (sometimes called the Sherry Triangle)🇪🇸 There are lots of varieties of fortified wine from around the world from Cyrus to South Africa however sherry specifically is from this region and is geographically protected (just like Scotch!) 🥃

What is a fortified wine we hear you ask? Simply, fortified wine follows the usual wine making process - that is, picking and pressing grapes before encouraging fermentation using yeast 🍷 Fortifying is adding a neutral spirit (often made with grapes) to STOP the process of fermentation before it is then moved to the next stage of maturation. . . . .check out our next post for more info on this 👀
