the chosen god child of the Jura...

Born into a family of cerial grain farmers native to the region, Juilen Marèschale was brought up to understand the true potential and beauty of his land.

Julien wasn't born into a vine-owning family. So after studying oenology in Dijon, at 23, he landed in the revered apellation of Pupillin

After further training under the legendary Pierre Overnoy and Emmanuel Houillon, everything Julien had learned in school was forgotten. His formal education was replaced by a more hands-on approach from the two winemaking titans.

In 2003, the new face of the Jura was founded, Domain De La Borde. Today he farms 5 hectares of the regions 5 native grapes.

Precise and expressive wines that beautifully reflect the terroir, complemented by a very hands-off approach in the cellar.

This is a man writing the next chapters of his regions story.

Laherte Frères Les 7 is a Champagne that reads like a love letter to the region’s heritage. Crafted from all seven permitted grape varieties—some of which have nearly vanished from modern production—it’s a nod to the past with a foot firmly in the future. The grapes come from a single old-vine plot in Chavot, farmed biodynamically and handled with minimal intervention.

The wine is precise and quietly complex, showing citrus, pear skin, and subtle floral notes, with a firm mineral backbone and a touch of savory grip. Fermentation and aging in neutral oak add texture without overshadowing the clarity of the fruit. It’s structured, restrained, and built to evolve.

Azienda Agricola Santamaria is a small, family-run winery in La Morra, one of the key villages in Barolo. With a history dating back to the mid-19th century, the estate has remained dedicated to traditional winemaking, specializing in Nebbiolo. Their vineyard, located in the Capalot cru at around 330 meters altitude, benefits from clay-limestone soils with sandy veins, which contribute to the finesse of their wines.

Their flagship wine, Barolo “Capalot,” is crafted through spontaneous fermentation in steel tanks, followed by 24 months of aging in large oak casks. It is known for its refined structure, with notes of spices, flowers, and a touch of licorice, balanced by elegant tannins and a persistent finish. Today, Walter Viberti continues the family’s legacy, producing expressive and terroir-driven Barolo wines that showcase the unique character of Capalot.

Domaine de Saint Pierre is a small but highly regarded estate in the Jura region of France, near Arbois. The vineyard spans about 6 hectares, with vines rooted in limestone and marl soils, ideal for the region’s signature grape varieties. Originally managed by Fabrice Dodane, the estate has become well known for its organic and minimal-intervention approach to winemaking.

Leading on from our last post on seasonality...

It's rhubarb season.

has been making an array of dishes over the last couple of weeks with Yorkshires finest.

This week is cooked cream with shortbread and pickled with mackerel. Last week was pavlova on mass from our private party pre-order list (email if interested)

It's a national favourite that is truly worth its weight.

For now...

As already stated, all good things come to an end. In the case of rhubarb, there's only a week or two.

Its rhubarb season.
........ has been making an array of dishes over the last couple weeks with Yorkshires finest.

There was pavlova on mass, cooked cream with shortbread, and pickled with mackerel. (Latter two still on the menu this week if you're hungry)

It's a national favourite that is truly worth its weight.

For now...

As already stated, all good things come to an end. And in the case of rhubarb, there's only a week or two left.

A man of the sea and the soil...

The archaic may argue against the new world, denying its ability to produce fine wine. Disregarding them as inferior to its ancestral titans. But most of these people have never tasted (or maby refuse) to the trial new world and its offerings.

When they open their eyes and come to their senses, send them seeking this man. Ex surfer turned revered winemaker, Duncan Savage.

Trained in pouilly-Fumé and the art of Sauvignon Blanc by legendary maker, Didier Dagueneau. Savage honed his skills and began working for Cape Point, until 2016 when he decided to go solo and founded Savage wines.

The wines may be savage by name, but don't be fooled. He's a rising star that thinks outside the box, while simultaneously creating some of the new worlds most acclaimed wines.
