Polly’s 7th Birthday Collabs x Pastore - Passionfruit & Lime Sour 7.0%

Wanting to leap on our shared passion for heavily fruited sour beers, we wanted to create a beer that was equal parts sweet and moreish, but with a defined puckeringly tart edge - step forward passionfruit and lime. Our collaboration beer brings over a tonne of fruit to the party to create a thick, pulpy sour that has that sweetness that sends our fans wild, but with a big hit of dry limey sourness that hits right in the cheeks.

Polly’s 7th birthday Collabs x Duration - West Coast IPA 5.9%

A collaboration long in the making - we’ve been honoured to call the team at Duration friends stretching back before their incredible Norkfolk brewery was up and running - being treated to a tour of the site and (legally) breaking in with Miranda and Bates before they had even broke ground in 2019. Like ships passing in the night, we’ve managed to miss one another since but when planning our seventh birthday beers we already knew our East Anglian pals were top of the list to work with.
Wanting to express our shared love of the old school to give a little bit of a break from the new school haze on this year’s lineup, we’ve gone full throttle with a West Coast IPA that pays homage to the brewers of yesteryear, but with one toot in the present to boot.
Keeping it simple on the hop bill with three pillarstone hops in Citra, Simcoe and Chinook, along with a flourish of a brand new to us hop in Audacia, we’ve layered the hot side additions to create a West Coast beer that is unashamedly bitter with a clean piney and resinous backbone, all the while with a summer’s picnic of bright fruit flavours.

Polly’s 7th Birthday Collabs x Spookton - India Pale Ale 6.1%

We were over the moon to find out our closest home city had a brand new brewery opening, and found even more common ground when we visited for the first time to see a brewkit very similar to the original Polly’s brew kit to wax lyrical over.
Since then we have routinely found Spookton’s beers on our radar and have been blown away at the quality being produced from our neighbours over the border.
Wanting to go with what we both do best, our birthday IPA is a beautiful meld of in-house favourite Idaho 7, alongside the freshly named Krush; both imparting juicy tropical notes with a sticky pine undercurrent. It’s our birthday though, so we couldn’t just leave things at that - a supercharge of DynaBoost in the whirlpool, along with HyperBoost on the cold side, all of the fruit-forward notes in this beer have been amplified up to 11 in an all out rush to the palate with intense mango, pineapple, and pomelo flavours.

Imperial Stout 10.0%

Letting the malt do the talking on this one, we’ve added -take a deep breath - Chocolate Malt, Crushed Chocolate, Brown Malt, Milled DRC, Crystal Dark, Black Malt, and Amber Malt alongside our usual base Pale and Wheat, to up the grist bill on this beer to over a tonne to bring all the intense flavour we need from this beer. Offset against a hot side addition of Simcoe for a whisper of bitterness, this is a no-frills, no-artery thinning adjuncts, straight up impy. Let those roasted coffee, dark chocolate, caramel, and to***co notes swirl as we reminisce on the old school!

Polly’s 7th Birthday Collabs x Sureshot - Double IPA 8.4%

We’ve been closely working alongside the wonderful folk at Sureshot since their founding in 2020 - the brashest, most neon-tinged, most creatively named beers of the incredible breweries that make up the bermuda triangle of craft beer behind Manchester Piccadilly station that we’ve found ourselves lost amongst more times than we care to admit, we couldn’t look any further than our pals in the archways to approach for an all out, amped up double IPA that leans on the talents of both breweries.
Bringing a cocktail of the most fruit-forward hops we possibly could source to the table on this beer, we’ve gone all out on this DIPA - mountains of the freshest crops of Citra, Idaho 7, Nelson Sauvin and Sabro make up this beer, and it shows in the flavour intensity.
A certified swagbag of punchy pineapple, coconut cream, lime, mango, gooseberry and passionfruit is on display in this beer specifically designed for a celebration - bring on the party!

Polly’s 7th Birthday Collabs x Pomona Island Triple IPA 10.0%

As it had been so overdue for us to collaborate together on a beer, we figured we may as well go all out when inviting our friends from Salford to North Wales - where else could we go than to brew our biggest triple IPA yet? A four way dance of the freshest possible crops of Mosaic, Citra, Talus and Strata, we wanted to bring the flavour to the max on this beer, without that cloying sweetness that can befell the style.
We’d say we’ve knocked it out of the park with this beer - if we’d have packed anymore into this beer we’d be bursting at the seams; with 24g/l of bold passionfruit, tangerine, sweet berries and coconut, with a whisper of rosewater and sage for complexity, this is definitely a beer fit for a birthday celebration.

Thornbridge - White IPA 6.8%

Wanting to embrace the bold hop forward brewing techniques we’ve become so accustomed to, but applying them to a more classic style, we’ve utilised the brewing expertise of our friends from Derbyshire to create a thoroughly modern White IPA. A beer with lineage in Germany thanks to our utilisation of SafAle W68 yeast, and roots that touch the classic IPAs of the United States with application of three cornerstone hops in Amarillo, Cascade and Citra, before a final flourish of new school titan Galaxy from the South Pacific rounds off this incredible hybridisation of styles expect fresh cut oranges, peaches, and pineapple, with a hint of banana and clove for complexity.
