This is how you make Rene's quick and easy healthy breakfast tacos!

Ingredients:
Taco ingredients: 1 wholemeal tortilla
2 eggs
1 tsp olive oil
1 tsp taco seasoning
1 pepper
1/2 large red onion
Coriander to finish

Salsa ingredients:
1 tomato
1/2 tsp chilli flakes
1/4 red onion
1 tbs Fresh coriander
Juice of 1/2 lime

Method: In a pan heat 1tsp olive oil and add in 1 sliced pepper along with 1/2 a sliced onion. Sauté this for 3-4 minutes on a medium flame or until the peppers and onions are slightly soft. Now add in 1 tsp of taco seasoning and crack in 2 eggs. Sauté this till the eggs are fully cooked. Slightly heat up a wholemeal tortilla and add in the egg, pepper and onion mixture. To make the salsa, chop up all of the ingredients finely. Top your taco with the salsa and a bit of fresh coriander and enjoy!
