Our MAKE WINE GRAPE AGAIN T-Shirt is now available in our store and in the online shop (www.zerodosage.de)! Be part of the natural wine community and vote for more grape in the glass;)

Idea and Design comes from our own minds and hands (obviously after a couple of bottles of natural wine). It was printed in Munich on 100% organic Cotton with 180g/m2 fabric thickness. Color of the Shirt is Vintage White to embrace the love and warmth of natural wine:)

Natural Cidre aka. Apple Pet Nat by in da house! Natural fermentation, no additives, pure apples turned in pure cidre, harvested from 60 to 80 years old trees from „Streuobstwiesn“ in Baden-Württemberg.

We have two Brut Cidres in store. One is a blend of 5 apple varieties (Généreuse de Vitry, Pomme d‘Or, Roter Fresquin, Bittenfelder Sämling & Trierer Weinapfel) with below 14 g/litre of residual sugar and the other one is a single variety cidre made from Goldparmäne (Rein de Reinettes) with less than 10 g/litre of sugar.

The blend is a bit more fruiter and broader on the palate whereas the single variety cider is a bit finer, elegant and less fruit pronounced. Both are super refreshing and work well with various types of salads, „Brotzeitplatten“, cheeses or desserts.

We love them both, find your favorite! It is summer time and also time for some low alcohol sparklings;)

Müller-Thurgau 2017 from Jörg Bretz from Burgenland in Austria.

It’s all about time. A wine that was given time. Being it the time the vine stood in vineyard (54 year), the wine he spent with the skins to ferment (14 days), the time he laid in big barrel (48 months) and the time he relaxed in bottle (3 years).

The time gave him calmness & balance, but it didn’t make him old. Still fresh & not heavy with flavors of exotic fruits and apple as well as wild herbs with well integrated tannins and acidity. This orange wine was made naturally just with a bit of sulfur added.

We love it, serious but still you and wild.

TOAST HAWAII by is one of our favorite natural wines, especially in these warm days!

Made of 50/50 Sauvignon Blanc & Traminer it has short skin maceration while fermentation which gives it structure and takes away parts of the primary fruit flavors. After fermentation it was aged in concrete egg resulting in a fresh, balanced and silky structure

Carmen and Herbert’s aromatic grape varieties from their limestone vineyards are never loud but characterful, mineralic with a funky twist. It is fun as well as complex and needs a bit of air (decanter or big glass) for greater enjoyment! A wine that shows great wine making with keeping it still a bit „dirty“.

Take a ham and cheese Toast with a glass of Toast Hawaii - Aperitivo the Austrian way;)

Need a break from beer and soccer?

Just one day before the final, Bistro Dosage will be serving you some fresh homemade summer soul food and selected natural wines by the glas on Saturday, 13.07.24 between 3:00 to 8:00 p.m.

On our menu for our Vol. 1 Session we have Gazpacho with Basil Foam and a homemade Sourdough Baguette with Mint Pesto, Eggplant, Feta Cheese and Cucumber Tatar (21 Euro).

While stocks last - so better be early and enjoy some good vibes, relaxed music and lovely Food Wine Pairings with us.

Shiny Shiny Crazy Crazy all new vintage 2023 by in store. Field blend of various grape varieties like Bacchus, Müller-Thurgau, Rieslinfg, et al. skin fermented and then finished fermentation in bottle. Nothing added, nothing taken, just addictive…

…fresh, crispy, drinky with flavors of apple, quince, field herbs in the nose. On the palate you have very refreshing and lingering tastes of lemon, grapefruit and light ye**ty notes. Such a great pet nat for all the lovers of thirst quenchers!

Stop by and meet those two great wine producers and friends (as well as neighbors) from Niederkirchen in Pfalz (Germany) presenting their wines and talking a bit of organic/biodynamic farming and low intervention wine making! We will prepare some snacks for you (included)!

New & old wines as well as new vintage im store by the great Burg(undy)land :) wine maker aka. Boris Kovacic from Austria! Skin Maceration is his Domain in white wines.

2 Grüner Veltliner. Drangalo 2022 short skin maceration for 2 days and then aged in steel tank for 15 months and Krawallo 2021 with 17 days of whole bunch maceration with aging of 13 months in new untoasted oak barrel and 15 % steel tank. One fresher and juicier the other one with more body, structure and complexity.

His reds in contrast light, straight and elegant. Gramuri 2022 is a 100% Blaufränkisch with 19 days of maceration and then aged for 7 months in new untoasted oak (30%) and steel tank. Fresh, fruity, silky tannins, minerality and elegance are characteristics of this wine.

New natural wines in store by the young and talented from Bordeaux. She took over 4,5 hectares from her grandfather in 2020 and startet straight with organic wine growing and low intervention vinification. So far she did three red wines working without barrel, just using steel tank and amphora for making pure, elegant wines with finesse and straightness. A newcomer to the Medoc, going her own way, in a region that slowly is also changing and going new ways.

2020 Chateau Bois de la Gravette made of 50% Cabernet Sauvignon and 50% Merlot aged simply in steel tank on the lees. Straight forward fruity fresh wine with length and elegance. Dark Cabernet fruit meets spice and pepper letting the grape be the protagonist and the drinker‘s palate its admirer who can’t get enough. Slightly chilled this wine will please lovers of lighter reds and those warmweather red wine drinkers.

2022 Idyllik Rouge is a blend of 60% Merlot and 40% Cabernet Sauvignon aged for 9 months in clay amphora. Eucalyptus, Black- and Blueberry with dark spice and robust tannins paint the beautiful picture of this great natural red. It is fresh and vibrant but also present by showing strength and character. Pairs well with red meat dishes, pasta and goulash.

2022 Oups! is born from 80 year old Merlot vineyards, resulting in a deep and concentrated wine that is everything else but a fruity Merlot pleaser. Also aged in amphora and bottled without any adding of SO2 this wine is still young with a present tannic structure, dark fruit, such as fig and plum, cacao, black pepper with certain complexity and length. We love it, especially because it is not so „Merloty“.

Foggy bubbles in da house! New Pet Nats von from southern Ortenau in Baden from the lovely Geraldine. Coming from a way different backround (diplamcy) she started wine making just a couple of years ago and released her first wine in 2019 called „Troubadour“. She focuses on making Pet Nats (in the beginnings with the help of her boyfriend Florian from the great wine producers Enderle & Moll).

We have „Troubadour“ (Müller-Thurgau) and „Diva“ (Pinot Noir) in our shop.

Troubadour 2022 comes from 45 year old vineyards and was spontaneously fermented for 3-4 days on the skins, bottle fermented and not disgorged. Flavors of apple, Apricot, Peach, Elderflower, bready notes and a fresh minerality. Very nicely balanced and drink animating with easy 11 % Vol.

Diva 2022 from just Pinot Noir has it’s name because of the difficulties this grape caused. It took a while and some experiments until it was like it is today - a great and pleasant red Pet Nat from 60 year old vineyards. Dominated by strawberry and cherry flavors with hints of mint and Eukalyptus as well as slight ye**ty notes.

Nothing added, nothing taken away, pure nature. Both of them are so pleasurable to drink and bottles empty quickly, so we actually can’t tell which one we prefer. We love them both! If you stop by get a hold of them - new year’s is close;)

Real wine…what’s real, what’s not?…a matter of perspective and perception…vivid wines, alive and full of character…like real people? Who can judge?…maybe if you taste and listen, you might be able, but even then, it’s just another perspective…good to have that many, to not loose the complexity of reality and (real) wine…cheers to diversity in a real wine world, never stop tasting, it broadens perspectives.

New in casa! Wines from Tenuta Foresto from the beautiful Piemont (Italy).Located south east of Asti in Nizza Monferrato...

New in casa! Wines from Tenuta Foresto from the beautiful Piemont (Italy).

Located south east of Asti in Nizza Monferrato founded in the winter of 2016/17 by Franceso & Pauline. They took over an semi-abondened farmhouse with vineyards not undergone any intensive agriculture for years. In the vineyards they only use a bit of copper and sulfur, everything else in hands of nature and handwork.

Vinification is done without any additives, no sulfur, no filtration, pure nature and character.

Three nice wines we got:

1. Favonio 2021 is a skin macerated Moscato with flavors of mountain herbs, muscat, ripe exotic fruits and ye**ty spices. Very handsome, but with grip and a certain twist. This is how a nice playful orange wine can be.

2. FR3154 2021 is made from the local grape variety Freisa! Last vintage of this wine - sadly, but even more worth trying. Spicy notes with eucalyptus and sour cherry flavors, perfectly balance to give you a drinky but not banal wine that works well with dishes but also on its own.

3. La IDEALe 2021 is a (not so typical) Barbera (di Asti). Dark colored, intense flavors of cacao, dried plum, violet, cherry and some bread from the yeast. We love it.

New natural wines by in store!

„Zuto vino je dobro“ 2021 (yellow wine is good) from Chardonnay and Welschriesling grapes is a very juicy white wine with floral notes, slight muskat flavors, ripe pear, very round and drinky summer wine!

„Ujca Hendrik uno zu Legende“ 2021 is a hommage to Luka‘s great-uncle Hendrik who passed on the farm to him. It is a red field grape from various grapes like Blaufränkisch, Zweigelt, etc. Flavors of black current, spices, slightly meaty and farmy. Funky, refreshing and a gate opener to light red natural wines for the summer time!

„Gora Bijela“ 2018 is a blend of 90% Pinot Blanc and 10% Traminer aged in used barrel. This is an astonishing white wines who slightly reminds one of Tscheppe wines from Styria. Very long taste of pear, ripe lemon, spices, light ye**ty touch, very straight and an continuous after tastes that lasts! Great wine that needs time to breath and works perfectly as food companion! We love it!

New PET to the NAT(ty) from in store now. This rhubarb colored Pet Pet is a perfekt refreshing companion for cozy sundowner evenings we were waiting so longingly for.

Skin fermented Grüner Veltliner, Chardonnay, Zweigelt and Riesling meet up to give you a extra funky twist taste experience!

Grapefruit, nectarine, slightly ye**ty and peppery notes with a fine grip will immediately catch your palate and thrive for the next sip. Open, enjoy, be happy…as simply it can be…sometimes…;)

New winery .family in store! The three siblings Viktoria, Leonhard and Mathias make excellent sparkling wines like the blanc de blanc from Chardonnay and Pinot Blanc - a complex & mature creation, refreshing & drinky pet nats as well as wild and funky natural wines.

Based in Loidesthal (Weinviertel/Austria) they work according to biodynamic principles in the vineyards as being a member of the organization . In the cellar they follow the philosophy of low intervention wine making.

They are always looking for new ways and experiments while having a blink on tradition and history.

We love their uncompromising work and diversity resulting in a broad and exciting line up.

Look what’s back in store to quench your thirst. Kalkspitz and Rosé Rurale from from Kremstal (Austria).

These Pet Nat s are quintessence of freshness, drinkability, minerality and purity. Grown on limestone these super light (10,5 % Vol) bubbles are the ideal apéritif, Sunday afternoon or recover drink.

Kalkspitz with its citric and green apple flavors is an animating pet nat from various grapes like Grüner Veltliner, Zweigelt, Sauvignon Blanc, etc blended from vintages 2020 and 2021 to give it a perfect balance.

Rosé Rurale is a slightly bit more floral with flavors of rose petals and wild berries. It is also a vintage of 2020 and 2021 with the grape varieties Zweigelt, St. Laurent and Muskat Ottonell.

We love them both - just depends on the mood and weather which one we drink;)

No sulfur, no bu****it added, just natural freshness. Now in store again!
