Cotswolds Sherry Cask Single Malt Whisky 70cl
A marriage of carefully selected and blended sherry casks makes up this rich and fruity expression. Each early batch of our Sherry Cask Single Malt Whisky is unique, drawn from our finest American and Spanish oak hogsheads & butts, some of which have been seasoned with dry Oloroso sherry and others with sweet Pedro Ximenez. All have been sherry-aged through their full maturation for a deeper and more flavourful whisky. Full of dark stone fruits and a hint of roasted almonds, followed by peppery oak spice.
TASTING NOTES
NOSE: Brown sugar and cherry pie with a touch of roasted coffee beans.
PALATE: Viscous and rich. Full of dark stone fruits and a hint of roasted
almonds.
FINISH: Peppery oak spice accompanied by notes of dried fruits.

Cotswolds Reserve Single Malt Whisky 70cl
The smooth and elegant Cotswolds Reserve is hand crafted in small batches using 100% locally grown, floor malted Cotswold barley. This expression showcases the influence of our first-fill ex-Bourbon casks which provide classic notes of vanilla, honey, butter[1]scotch and a hint of coconut, resulting in a truly smooth and moreish dram. A touch of whisky from our wonderful STR ex-red wine casks has been blended in to enhance the richness, fruitiness and sweetness of this remarkable whisky. Once fully matured, we disgorge the casks before blending and bottling the whisky by hand here at the distillery at a ratio of 80:20 - 80% Bourbon and 20% STR
TASTING NOTES
NOSE: Light caramel, apple and vanilla with a touch of chocolate.
PALATE: Toasted cereal with a sweet malt character.

Cotswolds Signature Single Malt Whisky 70cl
The Cotswolds Single Malt Whisky is the first whisky ever distilled in the Cotswolds. We use 100% locally grown, floor-malted barley and mature the whisky in first-fill ex-Bourbon barrels and reconditioned red wine casks. Rich, fruity and sippable with notes of honey, Seville orange marmalade and dark red fruits.
TASTING NOTES NOSE: Notes of honey and butterscotch layered with light fruits (peaches & apricots), a hint of marzipan.
PALATE: Strong notes of tannin-rich malt, oils and dark sugar with lots of spice, caramelised Seville orange marmalade.

Our Founder’s Choice Single Malt Whisky is our first cask strength release, made with 100% locally grown, floor-malted barley and aged exclusively in our founder Dan’s favourite casks: shaved, toasted and re-charred American oak red wine barriques. These uniquely active casks give a rich and intense maturation to our fruity new make spirit, offering toffee, oak and red fruits, and a beautiful, deep colour.
TASTING NOTES NOSE: Dry hay and cut wood, with dark chocolate and dried figs, and plums in sweet syrup. PALATE: Warming cereal and toast notes, with lots of fresh red fruits and butterscotch.

Σημειώσεις Αμπελώνων: Όλα τα αμπέλια βρίσκονται σε ένα οροπέδιο, σε ασβεστολιθικό ερυθρό αργιλώδες έδαφος. Οι αμπελώνες είναι εν μέρει γρασίδι για να δημιουργήσουν ανταγωνισμό με τα αμπέλια και φυσικά να μειώσουν τις αποδόσεις για τη βελτίωση της ποιότητας. Όλα τα αμπέλια μαδούνται τα φύλλα για να βοηθηθεί η ανάπτυξη του χρώματος και να αποφευχθεί ο βοτρύτης (γκρίζα σήψη). Από το 2005, ο αμπελώνας έχει μετατραπεί σε βιολογική γεωργία. Οινοποιητικές σημειώσεις Τα σταφύλια συγκομίζονται μηχανικά και διαβρέχονται εν ψυχρώ για 3 ημέρες πριν τη ζύμωση. Κατά τη διάρκεια της ζύμωσης οινοπνεύματος, τα σταφύλια τρυπούνται για να εξαχθεί χρώμα και τανίνες. Μόλις τελειώσει, το 15% συσφίγγεται και παλαιώνει σε γαλλικά δρύινα βαρέλια για 10 μήνες Περιγραφή: Κόκκινο ρουμπινί, έντονα κόκκινα φρούτα, δαμάσκηνο, βατόμουρο, μπισκότο, βανίλια, απαλές σφιχτές τανίνες και μακρύ τελείωμα.
Γευστικοί Συνδυασμοί: Όλα τα πιάτα με κρέας, τυρί, επιδόρπιο, και μετά το γεύμα, ως ποτό.

To Drumshanbo Single Pot Still Irish Whiskey,70cl παράγετε στην Ιρλανδία από το αποστακτήριο, The Shed Distillery, που παράγει και το Gunpowder Gin και την Sausage Vodka.
Ιρλανδικό κριθάρι βύνης, Ιρλανδικό κριθάρι χωρίς βύνη, Ιρλανδική Barra Oats (βρώμη) Το κριθάρι προσδίδει στο νέο απόσταγμα μοναδικό πικάντικο βάθος. Η βύνη κριθαριού είναι πολύ πιο μαλακή και προσδίδει στο απόσταγμα μια εγγενή γλυκύτητα και ένα βαθύτερο, πιο γεμάτο σώμα. Προσθέτετε μια μικρή ποσότητα βρώμης. "To make Sausage Tree Pure Irish Vodka, the fruits of the kigelia tree and wild Irish nettle are distilled alongside Irish grains at the distillery in Drumshanbo, County Leitrim.
As PJ contemplated the majestic plant, he recognised the innate kinship between it and the wild Irish nettle, found in the unspoiled woodlands of Drumshanbo, and also known for its purifying powers.
He brought them together at The Shed Distillery with Irish grain to distil “nature’s purest tasting vodka”.

Chateau de la Jaubertie Mirabelle Red – Cabernet Sauvignon, Merlot, Cabernet Franc Σημειώσεις Αμπελώνων: Οι αμπελώνες επιλέγονται για την τοποθεσία, την ηλικία και το υποκείμενο/κλώνο τους. Τα σταφύλθια ξεφυλλίζονται, συγκομίζονται πράσινα για να αποκτήσουν το μέγιστο ηλιακό φως και βέλτιστη ωριμότητα. Θέλουμε μόνο αμπέλια χαμηλής ευρωστίας και να αποκτήσουμε πιο συμπυκνωμένα σταφύλια. Οινοποιητικές σημειώσεις Τα σταφύλια μαζεύονται στη βέλτιστη ωρίμανση και στη συνέχεια ψύχονται στους 5°C κρύο εμποτισμένο για να εξαγάγετε περισσότερη γεύση. Μετά από 15 μέρες τα σταφύλια και ο χυμός ζεσταίνονται για να ξεκινήσει η αλκοολική ζύμωση. Μόλις ξεκίνησει, το χρώμα και οι τανίνες εξάγονται με διάτρηση των φλοιών του κρασιού. Αφού πιεστεί, το κρασί παλαιώνεται σε βαρέλι με οινολάσπη για 10 μήνες. Περιγραφή: Μαύρο σκούρο κόκκινο, καπνιστό, βραστό κόκκινο φρούτο, πλούσιο, καλά ισορροπημένο, δομημένο τανίνες, άγριο δαμάσκηνο με σοκολάτα, μακρύ άρωμα βελανιδιάς Γευστικοί Συνδυασμοί: Όλα τα κόκκινα κρέατα, ψητά βραστά ή ωμά, τυριά ή ακόμα και μετά το φαγητό.
