🍷 Zekai's January - San Felice Pugnitello 2010 $160.00 🇮🇹

🔹This wine has a complex and captivating aroma, with blackberry, blueberry and black cherry fruitiness intertwined with subtle hints of dried flowers, to***co, and leather. These notes were followed by a deeper, spicy allure. The body is medium to full, with fine, soft tannins and a refreshing, balanced acidity. On the palate, the black fruit flavors hit right away, complemented by licorice, vanilla, and the toasted spice notes from oak barrels. The finish is long, layered, and full of depth. The tannins are pleasant and polished. 🍒🫐

🔸While the label design is understated and simple, don’t be fooled by its modest appearance. The style more than makes up for the lack of showiness; this wine delivers solid, authentic character. 🙌

🔹I enjoyed San Felice Pugnitello 2010 with grilled meats, where the fruitiness and smokiness of the wine beautifully complemented the flavors. 🥩🍗🍖

🍷Anthony's December Stags' Leap Cabernet Sauvignon $81.99 🇺🇸

⬆️ Check out the second picture to see a cute deer (almost like a stag! 😆) who stopped by to visit while we were enjoying our wine! We think it wanted to try a sip of this iconic Napa Valley beauty!

🔹2021 turned out to be a very good year for the Napa Valley grape growers (and all along the US west coast ) due to ideal temperatures and precipitation when just the prior year central California saw many wild fires which affected its vast agriculture yield detrimentally. Today we see more of wild fires tragically affecting more than just one type of crop from this state.

🔸The 2021 Stags’ Leap is a great example of a great Cabernet Sauvignon having so much complexity, along with hints of black fruit finishes (think black cherry, cassis, blackberry) with nuances of violet flower, licorice, clove and smoke. I quite enjoyed this wine's long finish. 🍒🪻

😍 Simply put, we loved it.

🔹A basic charcuterie board with assorted cheeses, olives and crackers was the food accompliment and did not disappoint. 🧀

🔸The wine is dominated by Cabernet at 85% with small blended amounts of Petit Verdot, Malbec and others. 🍇🍷

🍷 Cheyenne's December - Domaine Dandelion Hautes Côtes de Beaune Rouge $94.99 🇫🇷

🔹Domaine Dandelion Hautes Côtes de Beaune is a wine made from Pinot Noir that comes from a small female-owned winery in Burgundy. The winery is organic while some of the wines are farmed using biodynamic principles! All of the vines are horse plowed by the owner Morgane and her father. 🐎

🙌 Fun fact: Morgane makes the labels for the bottles by hand. The paper is made from cotton, linen, h**p and flowers. The paper is then cut applied to the bottles, then labeled with Morgane’s handwriting and drawings. ✨

🔸Domaine Dandelion Hautes Côtes de Beaune Rouge is dark purple in colour and has gorgeous notes of bright red cherry, raspberry, cloves, and cinnamon. This wine is a medium body and medium-plus finish and very easy to drink! 🍒

🔹This wine's higher acidity level makes it a refreshing choice to pair with a variety of food, including seared duck breast, pasta with rosé sauce, and an assortment of medium-firm cheese! 🧀🍝🍗

🔸Domaine Dandelion Hautes Côtes de Beaune Rouge is an elegant, ageworthy wine with a story behind it and will surely impress guests at your dinner table and is a great choice for any special occasion!

🧐 Have you ever wondered what factors contribute to a wine's ability to age well over time?

🍷These factors help a wine evolve, developing more complex flavors, aromas, and textures as it matures. Here are the main elements that make a wine ageable/cellarable in bottle:

✨Tannin

Tannins are natural molecules found in grape skins, seeds, stems, as well as in oak barrels. They provide structure and act as a preservative. Wines with high tannin content, like Cabernet Sauvignon, and Sangiovese tend to age better because tannins soften and integrate over time.

✨Acid

Acidity is an important component for aging, as it acts as a preservative and helps the wine maintain its freshness as it ages. Wines with higher acid often age more gracefully, developing nuanced flavors over time.

✨Sugar

Sweet wines or those with a higher sugar content (like many Sauternes, Port, or Tokaji) often age better because the sugar acts as a preservative, preventing oxidation. This is why some dessert wines have the potential to age for decades, developing deeper flavors and complexity.

✨Aroma/Flavour Concentration

🍷 Rod's December - Jurij Fiole & Figlia Sonocosi Chianti Classico 2021 $71.99 🇮🇹

🔸Jurij Fiole & Figlia specializes in producing excellent wines from Chianti Classico. This area is known for its beautiful views and has a rich winemaking tradition dating back to ancient Roman times! 🏦

🔹Jurij Fiole & Figlia Chianti Classico Sonocosi is a standout medium-plus bodied wine made from 100% Sangiovese. It showcases intense aromas of red plum, sour red cherry, cinnamon and a bit of tomato leaf. It delivers vibrant flavours of the same sour red cherry, but also a touch of raspberry. These notes are complemented by a touch of earthy notes, all culminating in a remarkably smooth finish on the palate. I also enjoyed the array of Italian herbs in this wine, notably oregano and rosemary. 🍒 🍅 🌿

🔸I found Jurij Fiore & Figlia Chianti Classico Sonocosi is particularly interesting when combined with a Philly cheesesteak poutine dish. The wine's high tannin and bright acidity work well with the rich, savoury components of beef, cheese curds, and gravy. Additionally, the finish introduces a pleasing spice note, which adds complexity to the pairing. 🥩🥔

🍷 Carlos' December - La Sacristie la Vieille Cure Fronsac - $46.99 🇫🇷

🔸The La Sacristie la Vieille Cure is a Bordeaux blend of Merlot, Cabernet Franc, and Cabernet Sauvignon. The region where this wine is from is Fronsac, where they specialize in Merlot-based blends.

🔹The vineyard is located on a plateau of limestone with 30-year-old vines! The older vines make for concentrated grapes, which result in concentrated wine and the limestone soil adds finesse and elegance!

🔸La Sacristie la Vieille Cure is aged for 18 months in French oak that gives notes of cinnamon, clove and vanilla. It greets you with aromas of ripe cassis, plums black cherry and to***co. On the palate, it has a medium-plus body with velvety tannins, showcasing flavors of dark berries, liquorice, and a touch of vanilla and baking spices from the oak. It is well-balanced, with a lively acidity that keeps it fresh and a satisfying, lingering finish. 🍒

🔹The 2015 vintage is drinking beautifully now but has the potential to age gracefully for a few more years. I paired it with a steak and mushroom sauce and it was a perfect combination! 🥩🍄
