Did you know? Typically, it takes between 10 to 14 days to finish brewing kombucha. When a second SCOBY forms under the first one, brewers have to watch out for mold. Once the desired flavour is achieved, the SCOBY is removed, and the tea is chilled for another few days to allow the flavour to settle, and grow stronger from the leftover yeast and bacteria in the liquid.

Christmas is nostalgic for most, but for us it reminds us how Chateau Carolina first started. It was during the holidays when we first introduced our friends to our wine. They loved it and it quickly became a yearly tradition. This greatly encouraged us to move forward with our business - we invited local professionals to taste the wine and they thought it was great, too. Nearly a decade later, here we are...and we're so glad you've decided to join us!
