Creamy Tomato Soup

6 garlic cloves
2 large onions
2 medium carrots
1 28-ounce can whole peeled tomatoes
5 tablespoons extra-virgin olive oil, divided
Kosher salt
Freshly ground black pepper
1 teaspoon hot smoked paprika
4 ounces sharp cheddar cheese
115-ounce can crushed tomatoes
2 tablespoons Worcestershire sauce
¼ cup sour cream or whole-milk Greek yogurt, plus more for serving
4 thick-cut slices country bread

Cut 1 garlic clove in half and set aside. Smash remaining 5 garlic cloves & peel. Peel 2 onions & 2 carrots and coarsely chop. Open and drain 28-oz. can tomatoes into a colander set over a large bowl to catch juices.

Heat 3 Tbsp. oil in a large pot or Dutch oven over medium heat. Add garlic, onion, and carrots; season with salt and pepper. Cook, stirring often, until onion is translucent and just starting to brown around the edges, around 8–10 minutes.

Add 1 tsp. paprika and stir to coat vegetables. Cook, stirring, until fragrant. Add whole tomatoes and cook, stirring often, until tomatoes start to burst and break down, around 10–15 minutes.

Meanwhile, grate 4 oz. cheddar cheese on the large holes of a box grater.

Add 15-oz. can crushed tomatoes, reserved tomato juices, 2 tbsp Worcestershire sauce, and 1 cup water to pot and season with salt and pepper. Bring to a simmer, reduce heat to low, and cook 8–10 minutes, just to help flavours meld.

Remove from heat and purée soup until smooth.

Stir about ¼ cup hot soup into ¼ cup sour cream in a small bowl, then stir back into soup. Taste and season with more salt and pepper, if needed. Don’t let soup come back to a boil at this point or sour cream may split.

Ladle soup into bowl and top with a dollop of sour cream. Serve hot with some bread.

Mini Pavlovas
Servings: 8-10 mini pavlovas

Ingredients:
4 large (120 g) egg whites
1/8 teaspoon cream of tartar
1 cup (200 g) granulated sugar
2 teaspoon lemon juice
1 teaspoon vanilla extract
1/2 tablespoon cornstarch
1/4 cup coarsely chopped dark chocolate
2-3 drops purple food colouring

Directions:

1. Preheat oven to 300°F. Line one large baking sheet with parchment paper and set aside.
2. In a large bowl, beat egg whites with the cream of tartar until soft peaks form. Add in sugar, 1 tablespoon at a time, beating well in between each addition. Repeat until all sugar is incorporated, and meringue forms stiff and shiny peaks. *Don't rush this, as adding in too much sugar at once can cause the meringue to deflate.
3. Beat in vanilla extract and lemon juice. Gently fold in cornstarch.
Spoon the meringue onto the lined baking sheet, the size depends on your preference.
4. In a small bowl, add 3-4 tablespoons of the meringue mixture add food colouring and mix gently until combined. Zig zag it over each meringue, and then run a toothpick in small circles through the coloured meringue to create swirls.
5. Place baking sheet in the oven and turn the temperature down to 250°F. Bake for 1 hour, or until the meringue is a very light cream colour. Turn off the oven, leave the door cracked open, and allow to cool completely inside the oven, at least 1 more hour.
6. Enjoy with some mascarpone cream and lilac syrup.

Meringue can be stored in an airtight container in a cool, dry place for a couple days before serving.

Cucumber Salad
Servings:4

2 large English cucumbers, thinly sliced lengthwise
1 tablespoon kosher salt
3 tablespoons fresh micro greens
1½ tablespoon white wine vinegar
2 teaspoons honey
2 teaspoons olive oil
2 teaspoons pine nuts & sesame seeds
freshly ground black pepper, to taste

Directions:

1. Add the sliced cucumber to a colander and toss with the salt.
2. Set the colander in your sink or on top of a plate, as the salt will pull liquid from the cucumbers. Let this sit for 20 minutes, then rinse the cucumber with cold water.
3. Add the salad ingredients to a bowl. Add the drained cucumber to a salad bowl along with the fresh micro greens.
4. Stir the olive oil, vinegar and honey together in a separate small bowl, then pour on top of the salad and toss until combined.
5. Garnish with black pepper, additional fresh micro greens, pine nuts and sesame seeds.

Truffle Carbonara
Servings: 2
250g pasta of your choice
100g heavy whipping cream
2 eggs
1 teaspoon freshly ground black pepper
1 teaspoon salt (adjust to your liking if needed)
4-5 tablespoons Truffle Oil
Instructions
In a small bowl combine eggs, heavy whipping cream, freshly ground black pepper and salt. Set
aside.
Boil your pasta accordingly to the instructions on the package. Once cooked drain but do not
rinse otherwise sauce won’t stick to the pasta.
Transfer pasta to a non stick pan, add egg mixture and truffle olive oil and set it over a medium
heat constantly mixing. Take off the heat once you can see your sauce is creamy and it wraps
around pasta.
Serve immediately with some extra crushed black pepper and grated parmesan.

Pierogi with Caramelized Onion & Bacon (approx. 50-60 pierogis)
Dough:
3 cups + 2 tbsp flour
1 cup hot water
4 tbsp vegetable oil
1/2 tsp salt
Filling:
10.5 oz ricotta cheese
18 oz boiled potatoes
1 medium onion
salt and black pepper to taste
Toppings:
4 thick cut slices bacon, chopped
1-2 tablespoons salted butter
2 yellow onions, thinly sliced
Sour cream
1. Bring the potatoes to a boil in a large pot of cold water. Salt the water and cook until the potatoes are tender.
2. Drain the potatoes and mash them until smooth. Roast onion over medium heat until smooth and translucent. In a bowl combine potatoes, onion and ricotta cheese. Season to taste with salt and pepper and set aside.
3. To make the dough. In a medium bowl, combine the flour, salt, oil & water and mix until combined. Knead the dough for 2-3 minutes. Cover and let sit 30 minutes.
4. Roll the dough out onto a floured surface to 1/8 inch thickness. Using a biscuit cutter or a glass, cut out 3-inch circles. Spoon 2 teaspoons of filling into the center of each round. Brush the edges with water and fold half of the dough over the filling to enclose it. Press down the edges to seal. Be sure to keep the dough covered as you work to prevent from drying out. At this point, the pierogi can be flash-frozen on a baking sheet for 30 minutes, then transferred to a freezer bag and frozen for up to 3 months.
5. To make the butter sauce, cook the bacon in a large skillet over medium heat until crisp. Drain onto a paper towel. Wipe the skillet clean, then set back over medium-high heat and melt 1-2 tablespoon butter. Add the onions and cook 5 minutes, until softened.
6. Bring a large pot of salted water to a boil. Boil the pierogi in batches for 2-3 minutes, or until they float. Drain.
7. Drop the pierogi into the sauce, gently tossing to combine. Let them roast for 2-3 minutes then spoon the pierogi and onions onto plates. Top with bacon and sour cream and ENJOY!
