🌱Springtime is a time for new beginnings, new buds...and new wine releases!
🎉Introducing ...our new 2022 Chardonnay!
😀The Chardonnay grapes were hand harvested in great condition, then crushed and destemmed before a gentle pressing.
👉The juice was settled in tank before transfer to older French oak barrels for fermentation. Ferment was slow in the cool environment of the barrel cellar giving bright, clean and fresh flavours.
🤓Malolactic ferment was completed after which the wine was allowed to rest on its lees, with no stirring for 10 months.
👍The wine was then racked to tank where it settled and continued to age a further until bottling, when it was bottled unfiltered.

😄What's better than a good book? A good book paired with the perfect glass of wine, of course.
🙄Now, to be perfectly honest, I'm the sort of heathen who doesn't really pay attention to strict wine-and-food pairings.
😉But pairing books and wine just makes sense: some books have that light, bubbly feel to them, some books are dry and bold, and some books are more of an acquired taste.
🥰Why not pair a glass of our Cabernet Syrah with a good Romance novel. Why? Many romance novels are filled with passion, lust, anger, and desire. This red blend is rich, robust, and full-bodied, containing deeper and dark fruit flavours, with hints of spiciness and earthly scents.
📖Or pair a glass of our 2019 Barrel Select Pinot Noir with a Mystery Thriller. Why? Pinot Noir is elegant and complex, just like a good mystery. Its subtle flavours and silky texture enhance the suspenseful twists and turns of detective stories.

😉After a long winter as the ground thaws and the weather warms, a lot begins to happen in Niagara vineyards to get ready for the growing season. ​​​​​​​​​
☀️During the winter months, most grape vines are dormant and rely on the signal of warmer temperatures to awaken, which starts a new wine season in Niagara.
👉As the fear of harsh overnight frosts passes, Niagara wine growers work hard to finish pruning their grapevines and begin to secure vines onto their trellises, this process is called tying.
🙄It is important for growers to try and complete the tying process before any buds begin to break through. This minimizes damage to the vine.
🚜As the soil in the vineyard begins to dry out, vineyard owners that we purchase grapes from clean out their vineyards by removing cuttings and mulching, a process that helps return nutrients to the earth.
🍇This is a major part of what determines the quality of the grapes!​​​​​​​​​​​​​​​​

🇬🇧Like so many countries and cultures, Britain has its own traditional foods to celebrate the Easter holiday, from hot cross buns to Simnel cake to copious amounts of chocolate eggs.
😉No British Easter is complete without Hot Cross Buns!
🤓The classic British Easter Hot Cross Bun recipe originates with the Saxons, Germanic people who settled in Southern England in the 5th and 6th centuries. They ate hot cross buns to honor their goddess Eostre, the namesake of the festival of Easter. It is thought these buns represented the moon and the cross symbolized the moon's quarters.
👉To Christians, the cross symbolizes the crucifixion, making these yeast rolls perfect for this holiday.
🐰Hot cross buns are traditionally eaten warm with butter on Good Friday, but can also be part of the Easter Sunday feast.
😋What makes these rolls unique and truly British is that the starter dough is studded with dried fruits and candied peel, and is flavoured with mixed spice, a traditional British spice combination often including ingredients such as cinnamon, coriander seed, caraway, and nutmeg. A dough of butter and flour is then rolled into thin strips and placed on the baked buns to form a cross.

🎉On Good Friday in Great Britain, it's customary to eat fish instead of meat (that's reserved for a ham or lamb Easter feast on Sunday)
🇬🇧Hake is a genus term for 13 species of fish, although only one of these species - European hake - is found close to Britain.
🐟This fish tends to be considered to be a similar fish to cod, but it distinguishes itself by its firmer, meatier flesh and long, slender body.
🤓Hake is not only a fish, it is also a surname of English and Nordic origin. The name is thought to have derived from the Old Norse word haki. Hake, Haki or Haco was a famous Scandinavian sea-king in Norse mythology.
😋This delicious breaded Hake recipe is a certainly a celebration of Spring, combining succulent herb-crusted hake with tender asparagus and a vibrant wild garlic sauce.
🥰Our 2019 Riesling is the perfect wine to pair with this fish dish with pretty green apple, yellow plum and white floral aromas and on the palate, beautifully balanced with flavours of crunchy green and yellow apple, green plum and lots of citrus notes on the finish!

😉Baked Ham is often served at the British Easter table, which may seem odd since Jesus was Jewish and wouldn’t have eaten pork.
🙄It seems that this holiday food comes more from the timing of Easter rather than a religious meaning.
🐖Years ago, hams served during the Easter holiday were from meat that was originally slaughtered in the fall and cured throughout winter months.
🌷By spring, the cured meat was ready to eat—just in time for Easter! Ever since, it's been a popular choice for this holiday's brunch or dinner meals.
👉Baking a ham for Easter dinner gives the ham a mild flavour and soft texture that can pair well with both Pinot Noir and oaked Chardonnay.
🍷Why does Pinot Noir go well with a baked ham? It’s light, it’s got some great acidy, and it is a great wine to go with the light saltiness of ham.
💞Try either our 2018 Pinot Noir or our 2017 Barrel Select Pinot Noir with your baked ham!
😋Why does an oaked Chardonnay pair well with baked ham? Rich, oaky Chardonnays taste best with foods that are subtly flavoured, and simply seasoned... like baked ham!

💞The elegant 2018 Chardonnay spent 11 months in French oak barrels, the soft and aromatic 2018 Barrel Select Chardonnay was fermented in French oak barrels and left on the lees for 17 months, and the 2017 Canadian Oak Chardonnay was fermented in small Canadian oak barrels.
