WATERFORD - IRISH REGENERATIVE AGRICULTURE

We were the first distillery in Ireland to produce an organic whisky.
We were the first distillery in the world to release a biodynamic whisky.
We are the only distillery in Ireland certified by the biodynamic authority Demeter, as well as the Organic Trust – these partners certify the distillery itself and our whiskies.

Approximately 25% of our growers now farm using unconventional organic and biodynamic methods. But even our conventional growers take a low-impact approach, and are often involved in various environmental schemes.

Such is our quest to unearth whisky’s most natural flavours that we are currently the largest producer of organic and biodynamic whiskies in the world – we’re not playing around at this; we mean what we say. We take such ecologically beneficial farming methods – and the resulting flavour benefits – very seriously.

We believe there is a symbiotic relationship between the inquisitive distiller seeking purer, natural flavours, and the barley plant.

We believe that what’s good for the grain, is good for the drinker.

As the barley plant gets its nutrition from the soil, any natural enhancements there ultimately lead to ever more expressive, vibrant flavours – that’s what we’re after. But it also means that the wider environment benefits, too. Such practices, though increasingly being brought to conventional agriculture for the obvious natural gains, are most dramatic with biodynamic and organic agricultural methods, which is now more commonly being described as regenerative agriculture. This is the core of our ethos: traceable grain on a foundation of regenerative farming.

Years ago, long before Box Bizar existed, a quest began to find Belgian oak for whisky maturation—a wood never before used for this purpose. 🌳We sought oak from the forests of Rochefort, known for their pristine quality. Today, we are on the brink of tasting our spirit's evolution for the very first time and visiting our master distiller, Louis, at Craywinckelhof. 🤩🥳👌

Gerst is de bron van de smaak van malt whisky. Het wordt beïnvloed door waar en hoe het wordt verbouwd.

Wij geloven dat de beste gerst ter wereld lokaal wordt verbouwd, hier in Ierland. Omdat er "Iers" op de fles staat – dat is de herkomstbenaming – geloven we dat de gerst 100% Iers moet zijn. In tegenstelling tot de meeste van de industrie wordt onze gerst nooit gemengd met geïmporteerde gerst om vervolgens als generieke "Ierse mout" te worden geleverd. Geen enkele korrel wordt uit het buitenland verscheept, met verborgen emissies door de toeleveringsketen.

Met andere woorden, elke korrel is lokaal, verbouwd in diverse en opmerkelijke terroirs van Ierland. Alles, niet gewoon een kleine hoeveelheid om een mooie persbericht te maken, of om loze claims over klimaatimpact te doen.

We halen onze gerst niet alleen van lokale boerderijen, maar we houden ze ook gescheiden – we vieren deze individualiteit – als Single Farm Origins.

Als onze telers een uitdagende oogst hebben, die lagere opbrengsten of hoge eiwitten oplevert, kunnen we niet zomaar meer graan uit heel Europa verschepen, geleverd volgens een algemene distilleerspecificatie, met de resulterende koolstofimpact verborgen en doorgegeven aan anderen in de toeleveringsketen. Terroir-gedreven productie betekent dat we het spel moeten spelen met de hand die de natuur ons geeft.

Terroir houdt ons eerlijk en transparant – en onze TEIREOIR-code op elke fles toont deze eerlijkheid en transparantie.
