Let’s dive into the fascinating world of acids in wine! Did you know there are four primary acids that shape a wine’s taste, texture and stability? They are:
🍏 Malic Acid: Brings crisp, green apple flavours to wine. Sometimes converted to softer Lactic Acid during malolactic fermentation for that buttery, creamy feel.
🍋 Citric Acid: A small but mighty addition, boosting acidity and brightness in the final blend.
💎 Tartaric Acid: The backbone of a wine’s structure, stabilizing colour and flavour. (Fun fact: ever noticed “wine diamonds” in the bottom of your glass? They’re crystallized tartrates from tartaric acid!)
🧈 Lactic Acid: Found in smooth, creamy wines after malolactic fermentation — think buttery Chardonnay vibes!
Why does acid matter?
It’s essential for balance, enhancing flavour and creating that refreshing, mouthwatering zing we all love. From cooler climates producing wines with naturally higher acidity (hello, Germany and France!) to the richness of warm-climate wines like those from Australia, acidity brings it all together.
