Delight in every bite with our Cheesy Chicken & Rice Stuffed Capsicum! π«π
Ingredients:
4 large capsicums
450g chicken mince
300g cooked brown rice
1 can (400g) diced tomatoes
2 tsp olive oil
80g shredded Mozzarella
1 tsp garlic powder
2 tsp Italian seasoning
1/4 tsp red pepper flakes
1/2 tsp salt
Optional: 2 tbsp chopped basil for garnish
Instructions:
Preheat the oven to 190Β°C and lightly coat a baking dish with cooking spray.
Cut the top off the capsicums, removing the membranes and seeds. Arrange them cut side up in the prepared baking dish.
In a large pan over medium-high heat, warm the olive oil. Add in chicken, garlic powder, Italian seasoning, red pepper flakes, and salt. SautΓ© for 4 minutes until chicken is cooked through. Drain any excess liquid and stir in diced tomatoes and cook for an additional minute.
Remove the pan from the heat and mix in rice and mozzarella until well combined. Stuff the capsicum generously with the filling mixture and sprinkle the remaining cheese on top.
Pour a splash of water into the bottom of the baking dish with the capsicum and bake for 35 minutes, until the peppers are tender and the cheese is golden and bubbly.
