All the flavours of a rocky road but in a trifle 🤩🎄 This easy Rocky Road Trifle is the perfect twist to level up your traditional Christmas dessert. With layers of IGA’s Community Co chocolate mud cake, jelly, marshmallows and more, we’re sure it will go down a treat around the table this year 😍 Serves 8 Prep time 20 mins 🍰1 cup Community Co Mud Cake, sliced into 2cm slices 🍰2x85 g strawberry or raspberry flavoured jelly 🍰300 ml Black & Gold Thickened Cream 🍰1 punnet fresh strawberries, hulled and cut in half 🍰450 g double thick custard 🍰200 g marshmallows 🍰1/4 cup roasted peanuts, roughly chopped 🍰1 punnet fresh raspberries 🍰50 g dark chocolate, shaved or chopped 🍰100 g mini marshmallows 1. Prepare the jelly as per packet instructions and refrigerate until ready to use. 2. Whisk the cream until soft peaks form. 3. To assemble, place the mud cake on the base of the trifle bowl then layer with jelly, strawberries, custard and marshmallows, finishing with a layer of whipped cream. 4. Level up your entertaining game with our gooey and golden Cranberry & Brie Wreath 😍 With only a few ingredients, this festive centrepiece will set to impress while keeping within your budget! 🎄 Serves 4-6 Prep time 10 mins 1⁄2 cup whole cranberry sauce 1.5 tbsp Community co. red wine vinegar 1 small red onion, sliced 1 sheet puff pastry, thawed 125g Community co. double brie, cubed Rosemary sprigs 1 egg, beaten 1. In a saucepan, mix cranberry sauce, vinegar, red onion, and 1⁄4 cup water. Season and cook until onions are tender, and sauce slightly reduces. Set aside to cool. 2. Preheat oven to 180C 3. Lay the pastry on a tray lined with baking paper. Cut the pastry into a large circle then mark an inner circle with a smaller plate. Make 4 asterix-like cuts in the inner circle. 4. Spread cranberry onion jam on the outer circle, leaving a 1-2cm border. Top with brie slices and rosemary. 5. Fold one point of the centre star over the filling as well as bringing the outer edge of pastry inwards. Press the two together and continue until you have a wreath. 6.
