You guys have been loving our icy cocktail special featuring our new Lychee Pavlova Smash cocktail, so we’re sharing bar manager Simon’s recipe so you can make it at home.
INGREDIENTS:
1 blender :)
100ml Ester Lychee Pavlova Smash
30 ml lemon or lime juice
150g lemon sorbet*
Fresh passionfruit pulp
Big scoop of ice**
* If you can, use @gelatomessina lemon sorbet. It’s our long time favourite and really just the best one out there.
** More ice will make it thicker - it’s up to you how much you use depending what you’re after. Bloody good either way.

SPICED CANE SPIRIT.
For the classicists who want something simple to drink this Christmas - here’s Ester’s quick and dirty take on the Old Fashioned.
Muddle a sugar cube with two dashes of bitters and a splash water in a glass until dissolved. Add 60ml Ester Spiced Cane deliciousness, ice and stir. Top with orange peel and get sipping.

WHAT YOU’LL NEED:
60ml Ester Spiced Cane Spirit
8 mint leaves
30ml lime juice
20ml Demerara or raw sugar syrup**
2 dashes orange bitters
HOW TO MAKE IT:
Clap mint in the palm of your hands to release oils then place into glass. Add all other ingredients to your favourite tall glass.
Add crushed ice to glass and mix together. Remember to draw everything up through the ice as you stir.
Enjoy!
**mix equal parts Demerara sugar and water together. if you cant find it. use raw sugar

Lime twizzle
Add a large scoop of ice to a soda or hurricane glass, top with Spiced Cane and ice cream, then pour over your favourite cola and take delight in the foamy goodness that emerges.
