PRODUCER SPOTLIGHT: Iseya Distillery, Kanagawa, Japan. .iseya

This amazing range of amaros and bitters is made by Tatsuya Motonaga, who founded Iseya Distillery in Lake Sagami, Kanagawa, in 2021.

The distillery is housed in a repurposed, traditional 100-year-old house, where each batch of Scarlet is handmade and hand bottled from majority local ingredients, including Motonaga’s own botanicals.

Before Iseya, Motonaga’s career was spent working in some of the world’s greatest cocktail bars: Shibuya’s Coal Ila, Shinjuku’s BenFiddich and Taipei’s Wa-shu just to name a few. Here, he grew a desire to create a unique Japanese amaro brand, and started this journey by making a trip across Europe and the UK, visiting more than 70 distilleries.

He became enamoured with the nuance and beauty of the time-honoured craftsmanship and local agricultural practices that give us some of the world’s greatest beverages.

His Scarlet range embodies this essence. Every process is done without machines, from filtering and bottling, to labelling and sealing. They are rich with the incredible character and herbaceousness of their raw ingredients, making for the most satisfying of sips after a meal.

Be sure to ask us about Scarlet next time you’re in for dinner; no meal is complete without a short glass of one of these inspiring drinks!

Have you met Chef Mimi? 🔪

Originally from France, Mimi (aka Emeline Heems) joins us after six years working in bistronimic restaurants both at home and in Switzerland. At only 26 years old, Mimi has earned a reputation for her creativity and precise technique. She brings so much heart, consistency, fresh ideation, and so many laughs to our days at Wines.

She’s on a world tour and here for a good time, not a long time — so be sure to pop your head in the kitchen and say bonjour in the next month or so while we’re still lucky to have her!

MJ has a beautiful lineup for our final three Sundays. This weekend, MJ himself is taking a brief reprieve and mysterious duo Primo & Secondi is taking the reins in his absence.

It’s lovely to be recognised in the 2025 Top 100.

It’s a testament to our amazing team, who bring so much knowledge, expertise and passion to their work. Together we have worked hard this year to retain and build on the legacy of Wines – which last year took out WA Good Food Guide Bar of the Year – and to offer something different to our community and to food and wine lovers more broadly.

We strive to pursue excellence in our service, food and venue culture as we see it, with a people and planet first mentality. We believe this is reflected in the taste and beauty of everything we offer here.

Our success is only possible thanks to the incredible work and commitment of all our suppliers – the farmers and artisans who grow and bottle the wine we love, who make and deliver cheese and milk, who raise the animals and fish in the sea, who tend the vegetables. And all the small business owners and workers who source and import and represent so many wonderful things we use. We simply love your work.

Shoutout to all the friends and peers we’re in the awards alongside, working hard to make our city a better, more interesting place to live.

BOOKINGS NOW LIVE! New Year’s Eve ~ Fancy Dinner

Another year, another dinner. Join us under our leafy canopy or in our beautiful, candle-lit dining room to welcome 2025.

As with last year, the menu will be a surprise; but as with every day, deliciousness is a given. Chef will be dishing up a five course French-inspired menu with a few optional add-ons for those who really want to indulge.

We’ll be pulling some very special bottles from the depths of our extensive cellar to accompany, both to pour by the glass and for the bottle list.

This year we are offering two seatings: an early one for those heading home or elsewhere, and a late one that’ll take us through to midnight and beyond. Vibes will be immaculate, music will be just the right amount of loud, new friends will be there for the making.

$120pp and seats are strictly limited. We recommend booking fast, as last year’s event sold out within 24 hours.

SPECIAL EVENT: IT’S OUR BIRTHDAY! ~ Sunday, 22 December, 2–10pm.

To celebrate our one year anniversary of taking the reins at Wines, as well as the venue’s sixth year on William Street, we’re shifting into party mode for a walk-ins only event just like old times.

We’ll have a special wine list, a short, sharp and generous menu designed for sharing, and a lovely lineup of DJs soundtracking the afternoon and evening, put together by dear friend @01.16.1993.

SAVE THE DATE! New Year’s Eve ~ Fancy Dinner 2.0.

Continuing in last year’s spectacular style, we’ll be hosting another Fancy Dinner for this New Year’s Eve.

White table cloths, champagne by the glass, French-leaning set menu with luxurious add-ons, candle lit ambience: the whole glorious bit.

We’ll be offering two sittings: an early one for those looking to dine and – not dash, exactly – but either go out or go home; and a late one that ramps up into midnight for those who want to make a whole night of it. That means seats are strictly limited!

Bookings will open next Tuesday, 10th December at 8am. We recommend organising your group now and getting ready to book, as last year’s event sold out within a day.

SPECIAL EVENT: IN TOWN! ~ This Saturday, 7 Dec, 4-6pm. A visit from Sue and Rog of / for a Jura wine list takeover.

Come get a taste of what makes the wines of this storied region — wedged between Burgundy and Switzerland — so sought after.

Between what’s in our cellar and some select suitcase wines from Sue and Rog, we’ll be pouring some of the most ethereal wines in the world — from producers such as Bruyere & Houillon, Michel Gahier, Etienne Thibaud, Bornard and more.

We’re pairing the selection with a food special of fruits de mer, available until sold out. 🍽️☀️

Sue and Rog will be at the bar ready to chat between 4-6pm only, and we only have limited bottles of these special wines to share. That is to say: come along early!

Bookings recommended to dine inside. Walk-ins very welcome too – come have a chat and a drink and a meal and a really good time.

Our dear venue co-managers Amber and Sam are heading back to the green pastures of the Adelaide Hills early next year and as such, we are looking for new front of house professionals to fill their big and very lovely shoes.

We are searching for a new full-time Venue Manager (early Jan start date), as well as another full-time Front of House Professional looking for a senior role (Feb start).
