The cooler climes of New Zealand often yield some of the most delicious drops.

Dog Point Pinot Noir is no exception.

It’s been called ‘deliciously drinkable’ and ‘very seductive’ and at Wine God, we’ve have to agree.

When it comes to packing a picnic lunch (with your favourite bottle of wine) and choosing a location, we’re spoiled for choice.

Our favourite is sitting beside the Pambula River with its pristine turquoise waters that gently flow through the Beowa National Park.

Food and Wine Pairing Tips 🍷 #6

Find the perfect balance between pasta and wine.

Creating a harmonious balance between wine and pasta is essential to elevating your dish. If your meal is rich and heavy in sauce a full bodied Cabernet Sauvignon or Shiraz is the perfect choice. The robust flavour and depth to the wine is key to working well with your dish.

A medium bodied Pinot Noir is a more versatile pasta pairing option. It complements a range of flavours, making it an excellent choice for pasta dishes with various sauce types, including tomato based or mushroom based sauces.

Food and Wine Pairing Tips 🍷 #5

Don't be afraid to enjoy seafood with a glass of red!

The usual go-to for a seafood dish is a white wine, and for great reason... it's a delicious combination! But it doesn't have to be your only option.

We find that with a oily, fatty fish like a Salmon or Tuna, or a seafood dish in a rich red tomato sauce, a light - medium bodied red works incredibly well at bringing out the flavours of the fish. A perfect pairing would be a Grenache, Barbera or a Pinot Noir.

It yielded the Clonakilla Shiraz Viognier 2015. One reviewer described it as, “Gorgeous, silky texture, a symphony of character in fragrance, game meats, herbs, red berries, clove, sweet spice.”

Food and Wine Pairing Tips 🍷 #4

The delicate flavours and textures of seafood can be beautifully complemented by the right wine selection.

If the seafood has a lighter, fresher flavour (think oysters) pair with crisp white wines like Sauvignon Blanc or Chardonnay.

Oily fish like salmon can be enhanced with a medium bodied white such as Pinot Gris, or even – shock horror! – a red. We find a Pinot Noir works perfectly here!

Pizza and Wine. What works best?

- Hawaiian pairs well with Riesling as it acts as a palate cleanser and prevents the sugariness from the pineapple from becoming overwhelming.

- Seafood pizza pairs well with a fruity, aromatic white like a Chardonnay. This choice would match perfectly with the lighter sauce on the pizza base.

- For the meatier pizzas, such as a pepperoni or meatlovers, you are after something red. A Shiraz or Cabernet Sauvignon would work perfectly here as the boldness from the wine will cut through the fattiness of the meats.

- Supreme pizzas have it all, quite literally! The combination of veggies and meats creates an explosion of flavour. Because of the sheer range of taste in one bite, a sparkling white such as a Prosecco makes the perfect pairing here.

- Mushroom pizza, hearty and flavourful! This earthy tasting choice would pair perfectly with a light bodied Pinot Noir.

The secret is out.

Ask anyone who has made the trip south from Sydney to the far south coast town of Pambula (pop. 1,000) and they’ll rave about the unspoiled beauty of the beach, river and wetlands, the turquoise waters, the historic township and close-knit community.

Shhhh... We won’t tell anyone if you don’t.

Food and Wine Pairing Tips 🍷 #3

It is better to match the wine to the sauce of the dish you are cooking, rather than the meat.

Beef lasagne calls for ripe, juicy red wines such as a Barbera or a Sangiovese. Where as a smooth ricotta vegetarian lasagne would work perfectly with a lightly oaked Chardonnay.

Food and Wine Pairing Tips 🍷 #2

A red wines perfect match is red meat.

Generally speaking the more lean the cut of meat is, the lighter the red wine you should pair with it.

An example of this is a rich cut such as wagyu will work beautifully with a bold and high tannin red wine such as Shiraz or Cabernet Sav. However for meats with more delicate texture and flavour like eye fillet or lamb, choose a red wine with finer tannins, such as a Pinot Noir.
