As a lauded Formula 1 driver, he’s an eight-time Grand Prix winner and a Member of the Order of Australia. Most recently, he’s working with one hell of a partner in St Hugo

As it turns out, Dan knows what he’s on about when it comes to wine. He’s spent a lot of time in South Australia’s Barossa Valley in recent years getting in on the winemaking act with the team at St Hugo to create their wines.

This year, the range comprises the DR3 x St Hugo Cabernet Sauvignon 2021, DR3 x St Hugo Shiraz 2021, and the red blend, Ric Red by DR3.

Introducing the Whisky Pear – a collab with the very talented Kayla Saito. She’s been slinging drinks for almost 14 years and most recently, was part of the opening team at Molli, a new bar in Melbourne's Abbotsford.

“It's light and bright, with a wonderful fluffy head of foam. It’s sweet, fresh and a touch umami.”

Ingredients:
45mL Suntory Toki Whisky
2-3 shiso leaves
1 Packham pear
Glass: tumbler
Garnish: pear fan and shiso leaves

Method:
1. Cut one ripe pear into quarters and remove the stem and seeds.
2. Muddle shiso in the bottom of a glass.
3. Add your whisky.
4. Juice the pear directly into the glass – or add your pre-prepared pear juice.
5. Top with ice.
6. Garnish with a pear fan and shiso leaves.

Attention margarita fans! We’ve got a new citrusy, agave-based cocktail we think you're going to LOVE. Say hello to the Snake Eyes. 🐍

This one reminds us of a good mullet (the hairstyle, not the fish), with business in the front and party out the back.

Mezcal, lime and a salt rim shows that it means business, and coconut water, sugar syrup and banana liqueur get the flavour party started.

Ingredients:
45mL mezcal
30mL coconut water
15ml sugar syrup
15mL fresh lime
1 tsp banana liqueur
Glass: old fashioned or rocks
Garnish: lime wedge and salt flakes for the glass rim

Method:
1. Run a lime wedge around the rim of your glass, then dip it in salt. Pop the glass in the freezer to chill while you mix.
2. Add all ingredients to a cocktail shaker with cubed ice and shake until the outside of tin is frosty.
3. Carefully strain into your chilled glass over cubed ice.

An espresso martini but for matcha lovers…. meet the Matcha Fizz. 💚

And for what it’s worth, we reckon it’s a hell of a lot better than a matcha latte. Sorry, not sorry.

Combining soju and tequila (blanco works well here) gives the drink an earthy, aromatic depth, while matcha brings its own big unique flavour in all its grassy, nutty glory.

Ingredients:
40mL blanco tequila
20mL soju
1 egg white
1/2 tsp matcha
20mL fresh lime juice
20mL sugar syrup
60mL soda
Glass: fizz or highball
Garnish: matcha and icing sugar

Method:
1. Add all ingredients, except the soda, to a cocktail shaker.
2. Dry shake (without ice) – this helps to froth up the egg white.
3. Add cubed ice, and shake until the outside of the tin is frosty.
4. Carefully strain into a chilled glass and top with soda.
5. Garnish by dusting the matcha and icing sugar on top of the drink.

This vibrant cocktail is as tasty as it is easy to make. Think lashings of sweet, creamy sherbet flavours and a tangy citrus kick.

Ingredients:
45mL blanco tequila
15mL limoncello
15mL fresh lemon juice
15mL agave syrup
90g/1 scoop lemon sorbet
Glass: Nick and Nora or coupe
Garnish: salt flakes for the glass rim

Method:
1. Prepare your glass by running a lemon wedge around its rim and then rolling it in salt flakes. Pop the glass in the freezer to chill.

The Hot Winter Spritz gives everyone's summer favourite a cold-weather makeover - and we're here for it. Snuggle up with one this weekend.

Ingredients:
60mL Aperol
90mL prosecco or dry white wine
60mL cloudy apple juice
Cinnamon quill
Glass: heatproof glass or handled mug
Garnish: orange slice studded with cloves

Method:
1. Add all your ingredients to a small saucepan.
2. Bring to a simmer over a medium-low heat.
3. Carefully pour the mixture into a mug or heatproof glass.
4. Garnish with an orange slice studded with cloves.

While the exact details of the creation of the Pickletini remain a bit cloudy, it’s safe to assume a clever barkeep or two decided to get creative with their Dirty Martini, swapping olive brine for pickle juice.

Ingredients:
60mL vodka
10mL pickle juice
10mL dry vermouth
Glass: coupe or martini
Garnish: pickle, sliced longways and skewered

Method:
1. Add all the ingredients into a mixing glass.
2. Stir over cubed ice until chilled and diluted.
3. Carefully strain into a chilled glass and taste it – you may like to add a splash more pickle juice.
4. Finish by placing the skewered pickle in the cocktail.

If you’re new here, Matt Stirling is co-owner of one of the best bars/”smallest pubs” in Melbourne, Caretaker's Cottage, and an industry great.

He's made us a truly delicious cocktail – the Shutterbug. Kind of similar to a Daisy-style cocktail but with a herbaceous addition of amaro.

Ingredients:
40mL whiskey
20mL Amaro Montenegro
15mL lemon juice
15mL passionfruit syrup
Garnish: lemon leaf and a wedge of orange

Method:
1. Throw all your ingredients into a cocktail shaker, add ice and shake.
2. Strain into a tumbler or similar glass.
3. Fill the glass with ice.
4. Garnish with lemon leaf and orange wedge.

50mL Cognac
5mL pisco
10mL maraschino liqueur
