Do you like vermouth? COS we do! You see what we did there? Maybe not, because we are so excited about this Naturale Sicilian Vermouth we forgot to tell you why...
Naturale is a project of Giusto Occhipinti and Simone Sabaini a famous Chocolate maker and friend in Modica, to produce some local Vermouth based on the Wines of COS. Not to mention almost all the botanicals are sourced in Sicily.
Both were fermented with indigenous yeast, true to the COS ethos of the belief that organic and biodynamic viticulture hold the key to harnessing Sicily's unique terroir. We think both are best served over ice, simply add nothing, sit back and take in the view.
Vermouth Rosso: Camomile, rhubarb all wound together with a moreish herbaceous edge. $68
Vermouth Orange: Fermented using Moscato Passito, then later sweetened with Sicilian Oranges. Aromatics of Orange, Jasmine, and spiced fig. $80
