Ramdan Starter Recipe
Labneh makes for the perfect Ramadan starter. βΊοΈ This dish is creamy, soft, tangy and nutritious, and oh so yum!π
Prep time: 15 mins
Ingredients:
500g natural Greek yoghurt
ΒΌ tsp salt
Dukkah:
Β½ tsp coriander seeds
Β½ tsp cumin
1 tsp fennel seeds
2 tbsp almonds, toasted
2 tbsp pistachios, toasted
3 tbsp sesame seeds, toasted
ΒΌ tsp cayenne pepper
Method:
1. Mix the salt and yoghurt together then place over a strainer lined with a muslin cloth or paper towel.
2. Place the strainer over a bowl and cover. Leave in the fridge overnight or a minimum of 5-6 hours.
3. In a dry pan over medium heat, toast the coriander, cumin, fennel seeds and toss regularly for 2-3 minutes until fragrant.
4. Add spices in a small food processor and pulse for a few seconds until spices are ground.
5. Add the almonds, pistachios, sesame seed, cayenne pepper and a generous pinch of salt. Pulse again until you have a coarse mixture.
6. To serve, turn strained yoghurt onto a serving platter removing the muslin. Sprinkle dukkah over the labneh and a drizzle of olive oil on top. Serve with warm flatbread.

cheddar cheese, water crackers/breadsticks, yellow capsicum and baby corn.
πGreen:
green grapes, celery cut into sticks green capsicum, cut into sticks, green olives,
herb cheese and pears.
πPurple:
beetroot hummus, red grapes, kalamata olives, blueberries, plums cut into wedges.
Using a large chopping board, assemble the group's suggested ingredients according to colors starting with red, followed by orange, yellow, green and purple.

Dumpling Recipe
Savory morsels of pork and prawn seasoned with sesame and chives. Absolutely delicious and easy to make at home! The perfect Lunar New Year meal! π€π§§
Serves 30 dumplings
Prep time 30 mins
Cooking time 20 mins
π₯200g peeled green prawns
π₯1 egg white
π₯Β½ tsp salt
π₯1 tsp sesame oil
π₯300g pork mince
π₯2 tbsp chives
π₯ 30-round dumpling wrappers
1. Place the prawns, egg white, salt, sesame oil in a food processor and blend until smooth.
2. add the prawn paste, pork mince, and chives in a medium bowl. Mix well until all combined. Set aside in the fridge until ready to use.
3. Place a tablespoon of the filling in the center of the wrapper.
4. Dip a finger in a bowl of water and run it along the edges of the pastry.
5. Gently fold the edges together and pinch to seal.
6. Once you have filled all your pockets, steam the dumplings in a steamer for approximately 20 minutes until cooked through.

Noodle Salad
The higher you throw this noodle salad, the more luck for Lunar New Year! Itβs a fun and messy tradition ππ§§Good luck!
Serves 4 - 6
Prep time 25 mins
1 carrot, shredded
1 cucumber, shredded
Β½ small Chinese cabbage, shredded
Β½ daikon white radish, shredded
ΒΌ cup pickled ginger, cut into strips
ΒΌ cup pickled onions
2 tbsp sesame seeds, toasted
Β½ cup roasted peanuts, roughly chopped
Β½ bunch coriander, washed and roughly chopped
1 cup (70g) fried noodles, crushed
100g smoked salmon
Dressing:
Β½ cup plum sauce
1 Β½ tbsp soy sauce
2 tbsp sesame oil
Β½ tsp five spice powder
3-4 kaffir lime leaves (optional), ribs removed and finely chopped
1 lime, zested and juiced
1. Make the dressing by adding all the ingredients in a bowl and whisk to combine. Set aside until ready to use.
2. Arrange all the elements on a large serving platter.
3. Pour the dressing on top.
4. Grab your chopsticks and toss!

πΏ20 g butter
πΏ1 garlic clove, crushed
πΏ3/4 cup of medium grain rice, washed
πΏAny herb roots of stems like coriander, dill, or parsley
πΏ1.5 cups of water
1. Melt butter with a drizzle of olive oil over medium heat. Add crushed garlic and cook for 1-2 minutes until fragrant.
2. Add rice, herb stems, water and a generous pinch of salt. Bring to boil, reduce heat to low, cover and simmer for 10 mins.
3. Remove from heat and set aside for another 10 minutes (covered) for the rice to fully absorb the liquid.
4. Remove the herb stems, fluff rice with a fork and serve!
