AMARO #9

We're very excited about this!!

Following three years of trials and tweaking, we're so stoked to have the first of our amaros available for you to take home.

Made in demi-john, Amaro #9 is a blend of off dry red and white wine (mostly red), and organic, bitter digestive herbs (thank you .chinese.medicine).

Happily, we made this without fortification, so the ABV is a pleasant 12.5%.

A stunning, bitter digestive, Amaro #9 is of course organic and preservative free and an exceptional pre-dessert.

An absolute rarity landed in the shop yesterday.

Back in 2018, Ashley and Jane added 80 dozen oysters, 80 dozen mussels and seaweed to a kettle of roasted malt and raw grain and now, in 2025, following five years of wild fermentation we have the latest rendition of the Hayley's Comet of beers, the Two Metre Tall Salty Sea Sour.

One of the most erudite people in Australian drinks / agriculture, Ashley Huntingon affectionately describes this as 'one of the greatest beers we've ever made'.

Another jewel from the Huon brewery currently producing some of the most thrilling fermented beverages in Australia.

Please join us for our first masterclass of 2025!! This is going to be huge.

On Thursday the 22/5, Public is delighted to welcome none other than Gianmarco Antonuzzi of iconic Lazio domaine Le Coste for an in-depth tasting and discussion of the estate.

For more than 20 years, Gianmarco and partner Clementine Bouveron’s wines have graced the lists of some of the world’s best restaurants and wine bars and are celebrated for their depth and energy.

Having met Gianmarco working in Alsace with Bruno Schueller, Clementine already boasted a serious CV with stints at Le Mazel and Thierry Allemand, among others. Gianmarco came to Alsace with a law degree and time spent working in journalism and soon the pair decided to return to Gianmarco’s home town of Gradoli and begin their own project.

In 2004, Le Coste was born on the shores of Lake Bolsena.

The vineyard today covers more than 10 hectares planted on volcanic soil right by the lake. Complex by its very nature and composition, the terroir here creates wines with great mid palate density and concentration with tannic frameworks that make the wines wonderfully gastronomic.

Clementine and Gianmarco’s farming is certified organic and the wines are resolutely made without additions.

In the winery, myriad styles are made and a very great reference is placed on diversity of type and length of elevage.

Essentially, this is one of the most revered estates in the world of contemporary, small scale organic viticulture, not just in Italy but around the globe.

A fierce protector of organic farming, Gianmarco is also a highly entertaining communicator and we are beyond excited to have him joining us at Public.

On the night, we’ll be tasting through 12 wines, all domaine grown and bottled. Gianmarco will be joined by importer Giorgio De Maria and Public’s Campbell Burton for the discussion and, as always, the tasting will be accompanied by snacks from the kitchen.
