FREE TASTING - JOSHUA COOPER RELEASE //
We were lucky enough to taste with Josh on our balcony this week, and these wines are absolutely stunning. In 2024 Josh was named Best Winery of the Year by the Halliday Companion.

From 12pm today, we’re pouring a free tasting of his four new releases - Chardonnay, Rosé, Pinot Noir, and a Cabernet blend.

No bookings required, just swing by and taste for yourself. Cheers!

Dr Edge is without doubt one of the most talked about wines coming out of Tasmania at the moment. It is the brainchild of Peter Dredge (Dr. Edge) who is a self confessed music tragic, dedicated Pinot Noir specialist and luckily for us, a fu***ng great winemaker.

His bottes are packed with robust character and nuances spanning from super traditional through to more progressive styles. There are no rules when it comes to the way he makes wines and that’s one of the reasons we love him.

The bottles are adorned with an assortment of original artwork in a combination of fun loving transformers and some slightly more serious portraits and graphic busts gifted to Peter by Tricky, the vocalist and one of the masterminds behind Massive Attack.

These 5 bottles are bloody delicious and we are super happy to have them on the wall.

2024 Dr Edge Tasmania Riesling
A little gem that we adore. It's made with a blend Riesling from three different areas and pressed to clay amphora, old French oak and stainless steel. It's bottled with the tiniest amount of residual to create a luscious texture and offer a delicious fruit sweetness. This is a banger.

2024 Dr Edge 'Ambrosia'
A blend of Pinot Gris and a dash of Schønburger fruit from The Tamar Valley. Cofermented on skins for one week, it's pressed to steel tanks to dry out and is bottled without filtration.

2024 Dr Edge 'Tyrannosaurus dREDge'
A blend of two Pinot Meunier Vineyards from Tamar Valley and Derwent Valley regions in Tasmania. Fermented on skins for one week, they were pressed to steel tanks, then blended and bottled without fining or filtration. A dash of Pinot Noir is in there for extra roar.

2024 Pinot Noir 'Rain & Purple'
You can do the maths. Finally, a Dr. Edge Pinot Noir in 'vin de soif,' (wine for thirst) style that won't break the bank or the cellar - drink now.

2023 Dr Edge Tasmania Pinot Noir
A beautiful mid weight Pinot Noir that celebrates the wonderful cherry notes we expect from Tasmanian Pinot. It's complex, vibrant, and goes down way too easy. As a bonus, we bought a chunk, and you can't even get this at their own cellar door anymore.

From day one, our intention was always to have community at the heart of Spill, and this week’s Words & Wine was a perfect reminder of why. Watching people – some familiar faces, some new – come together over a glass, sharing stories, perspectives, and plenty of laughs, has been something really special.

It’s never just about what’s being read or poured, but the connections made around the table. Love it because: One of the best Tasmanian sparklings I’ve had. Pair with oysters — summer afternoon pairing done right.

JAMIE // Christian Tschida ‘Birdscape Pink Maceration’
2021 Blaufränkisch Blend, Neusiedlersee, Austria – $85 RRP
Love it because: Unapologetic natural winemaking. Pomegranate, rose kombucha. Drink if you want to be challenged.

SONIA // Henschke ‘Julius’
2023 Riesling, Eden Valley, South Australia – $52 RRP
Love it because: Crisp lemon zest and lime with elegant minerality. Pair it with fish and chips at the beach. Drink now, or cellar.

SEAFOAM

This deliciously crisp Pet Nat is bursting with the kind of freshness needed in a Queensland summer. Think about eating a perfectly ripe nacho pear at the beach with a sea breeze in your face. This is that. Fish and chips, some crisp hi 5’s and a bottle of this makes for a bloody good day.

ORAGAMI

This perfectly blushing pink number doesn't just match our deco, it also drinks beautifully. This rose is dry, a little floral, and gives us gives us some pink lady apple vibes. Get this in your fridge and then get it in your face because it’s a winner every day of the week.

HALCYON DAYS

Halcyon Days truly does give us idyllic vibes of days gone by. This Nero D’Avola is exactly what you want out of modern Riverland wine. It’s bold with ripe fruit, fresh in its texture, and has a little bit of spice to make things nice. Get this with some Squid Ink Salami and a piece of Blue Cheese, and you’re laughing.

PASTAFARIAN

It says it in the name. This is the midweek bottle you have with a bowl of pasta on the couch. Sangiovese is truly one of the worlds greatest varietals. It goes with nearly everything! So do yourself a favour, make a bowl of spaghetti, toss it through some tomato, and tuck into perfection. If you need a tasting note on this, it would be “yummy”. Pairs perfectly with the new series of Squid Games.

Gustave Lorentz's 'L'ami des Crustacés' Pinot Blanc—a versatile white from Alsace, France, that’s perfect for Summer sipping.

Crafted from 70% Pinot Auxerrois and 30% Pinot Blanc, this versatile white is all about delicate white flowers, honey, melon, and a zing of citrus. Lively, dry, and beautifully balanced, it’ll pair perfectly with seafood, chicken, and salad dishes.

This bottle is on the list this week and best paired with our Hervey Bay scallops. Trust us, you’ll be coming back for more!
