With Christmas edging closer it’s important to lock down the right bubbles for the day, and are here to tick that off your list

The sparkling is made of an almost even split of Chardonnay (55%) and Pinot Noir (45%) from grapes grown in their Tamar Valley vineyard. Free run juice and lightly pressed the grapes are oxidatively handled. The first fermentation is in rank and cool temperatures before being blended with some earlier vintages aged in French Oak. The wine has undergone the traditional method with the triage and second fermentation and bottle. Prior to disgorging the wine is left of lees for two years.

Full of crisp apple and citrus notes are balanced by bread and biscuits aromas with a vibrant acidity, full mouthfeel and a slaty, mineral persisting finish.

OVERPROOF RUM

Normally spirits will have an ABV (alcohol by volume) or ‘proof’ amount of about 40% (or 80 proof) however, when Overproof is on the label, this percentage is higher.

Commonly seen in rum distilling, the spirit normally starts at about 50% ABV with most not exceeding 75% ABV. Normally Overproof Rum will sit around the 57% ABV mark. It has also been referred to as Navy strength because of the longstanding history between the Navy and Rum.

In 1731, the Royal English Navy adopted Rum as its beverage of choice on board ship, with allocated amounts of the high strength spirit implemented as part of the daily rations..As the Navy moved more into the Caribbean and control of Jamaica, it became apparent how fickle beer and wine were to store, and that rum was most reliable spirit of choice. Its during this time that the Overproof became so apparent as if the gunpowder on board got wet, it would cause a misfire that was detrimental during these turbulent times. So by ensuring that the rum was overproof, it ensured that even if the gunpowder did get wet, there was enough alcohol to ensure that it would still ignite. They tested this by mixing a small amount of Rum and gunpowder to see if it would ignite and burn with a flame. If it did, then this was ‘proof’ of alcohol. Going off with a bang meant it was deemed ‘overproof’.

Founded by Martin Crowley and John Paul DeJoria, it’d be hard to find someone who doesn’t know or has at least heard of

Crowley was a down-on-his-luck entrepreneur and DeJoria had just had his fortune from hair care products when they two joined forces in the late 1980’s with Fransisco Alcaraz. As the Master Distiller, he helped catapult the pair and then went on to oversee the tequilas production for the next 30 years.

Their name was not trademarked for quite some time after the distilleries conception. Riserva de Patron was another distillery and Patron needed to pay royalties to them for quite some years in order to use the name.

There had been some debate in the spirits world about the copyright of their distinctive bottle with Don Julio and Patron, however the Mexico Institute of Industry in Mexico City granted the rights for them to use the bottle globally as well as in Mexico. The distillery was moved to Hacienda in 2002, and has continued to produce tequila here ever since.

INVITATION 15yr

is one of Canada’s top-selling whisky makers, and has been distilling as far back as 1858.

The Invitation Series is their way of celebrating the vintage by aging them further prior to release. Canadian Club Invitation Series Issue No. 1 – 15-Year-Old Sherry Cask was made using corn, rye, rye malt and barley malt. From here it is matured it for a further 3 years in  Oloroso sherry casks for a final maturation.

With rich, warming aromas of toffee, spice are complimented by subtle sweetness and mellow wood on the palate. Sip neat or over ice.

With weather like it is today, for some the first thought isn’t to crack open a bottle of red and drink it by the pool, but the guys at have given us the Adelo which is perfect for it!

Adelo was first made back in 2011 before being retired in 2013 but has been brought back 10 years later. A multi-varietal blend that’s made up of Grenache (26%), Shiraz (25%), Touriga Nacional (25%) and Montepulciano (24%) from predominantly vineyards in Langhorne Creek (45%), but also from Riverland (26%) and Adelaide Hills (25%).

Vinteloper chose to create wines separately from each of the grapes first as a means of ensuring that the specific requirements of each grape during the winemaking process was respected. This allowed the varietal needs of each grape to be properly fostered. From here they then took samples from the barrel and blended them together prior to bottling.

With a light body, the wine is stuffed full of bright and juicy red fruit characteristics with hints of floral and white pepper in the background rounding it out. With a soft and balanced tannin structure, the wine is perfectly served slightly chilled.

Bubbles and Melbourne Cup go hand in hand so we thought we’d look into the sparkling wine technique, disgorgement.

When sparkling wine is made through the méthode traditionnelle (traditional method) there is a technique during this process which sees lees removed from the bottle.After the second fermentation has taken place, the lees are then encouraged towards the neck, angling downwards so that the lees then fall towards the neck of the bottle over time. It’s at this step that disgorgement takes place, with the winemaker choosing a manual or mechanical method.

In mechanical disgorgement, the bottle’s neck is dipped in a freezing solution, then the bottle is turned upright, the cork is removed, and internal pressure ejects the frozen sediment. Manual or Disgorgement by hand (à la volée) is typically used for older vintages and involves tipping the bottle upside down, opening it, and then quickly flipping it over to remove just enough wine to get rid of the sediment.

After purchasing the 600-hectare property on Tassies east coast back in 2017, Rod and Cecile Robert’s haven’t looked back. Rod’s background in horticulture and knowledge of the local soil and water dynamics made them confident grapes would flourish on the property and so .wine was born.

Setting up camp on the property they set out to better understand, integrate and reinstate the natural landscape by planting native species and introducing a colony of bees to support their local eco-system, all whilst camping onsite. From here they were then able to focus their attention on the grapes with 20 hectares of Pinot Noir, Chardonnay, Shiraz, Grüner Veltliner, Pinot Gris, Riesling and Sauvignon Blanc being planted.

The first wine was released in 2022 and since then, each release is more refined and elegant than the next. Don’t just take our word for it though and try the range in-store or on our online shop

Sometimes referred to as tropical or summer ales, the style of Pacific Ale is regarded as a beer that is known for its high levels of hop fruitiness with characteristically low to moderate amounts of hop bitterness. This refreshing style has become a core range for many breweries even though it is relatively new to the brewing industry.

Often the style is light to medium body and packed with passionfruit, mango, lychee, and citrus flavors. These are then complimented with the style’s malt profile (often containing moderate amounts of wheat malt) that enhances the beer’s delicate body and high levels of carbonation.

CAMPARI

was created in Milan in 1860 and the recipe has remained the same ever since. Although the exact formula is top secret, Campari’s known for its intense orange peel, rhubarb, and bark characteristics.

Historically Campari got its deep red hue from carmine dye, a red dye derived from cochineal insects, though it has been made with vegan dyes since 2006.

By the 1920’s, the now infamous Negroni and Americano cocktails were born featuring Campari as the hero of the drink.
